I have an irrational fear (ok...I have many. But today we're just discussing one).

I am terrified of having a child with a peanut (or any nut) allergy. Because...um...would I have to give up peanut butter? I CAN'T DO IT GUYS! I CAN'T! I don't even know what I would feed my childrens. So...this is a very real fear that I think about a lot (because I'm neurotic.) And it's so sad because some kids can't even be NEAR peanuts. And it's like...how can they go out in the world? In Disney World, my brother and I were snacking on some peanuts before Fantasmic! when a mother asked us to please stop eating them because her son (who was in line near us) is allergic. Apparently she had an Epipen just in case but...still. Like....she has to try to make sure no one eats peanuts around her kid. That is rough. So..I'm scared.

(and I hope no one with nut allergies or children with nut allergies take offense to this, I'm merely recognizing the challenges I imagine you must face)

Anyway. Currently, there's nothing in my life impeding me from my beloved peanut butter. Which is good because...not only is it gosh darn delicious, it's pretty darned healthy (if you use the right kind any way). So with the assistance of that magical spread, you can make healthy little treats that taste like cookies or candy.

This recipe is SO. GOOD! The perfect breakfast or snack: they're bite sized, chewy, full of filling fiberlicious things like oats and flaxseed, and they have tasty chocolate and peanut butter. WIN. They're miraculous little bites. You can take them on the go for an easy breakfast or quick treat. BUT WAIT-there's more!

It takes like....10 minutes to make these yummy little balls of goodness. And there's no baking. You just mix em up, roll them into balls, and eat or store them! THE END. It doesn't get any simpler. So. You're smart people. You're probably going to go make these now, yes?

Something Saturdays (3/29/14)

STUFF IS HAPPENING! Michael has officially been hired, and he'll start work April 13th (and he's gonna be working a super wonky schedule of Friday-Tuesday, 3-11PM). Then, on the 30th, he and my mom will come here and we'll move myself and our apartment. And then we'll move into our gorgeous townhouse in Cuyahoga Falls! It's a part of Yorkshire Woods and I'm SO EXCITED! It's 2 bedroom, 2 bath, it has a walk in closet, a dining room, a fireplace, a dishwasher, hookups for washer & dryer (ugh I am not looking forward to having to buy those though), a patio in the front AND there's a pool, fitness center, tennis courts, clubhouse, and picnic area. It's so amazing and I can't wait to live there. But...in the meantime...I am overcome with anxiety. We have so much to do-packing, seeing people, doing things. And...I'm starting to get sad about leaving NY. I'm still happy and excited, but it's bittersweet, ya know?

Peanut butter thumbprint cookies are a classic, they always make me think of Christmas-time. But...these thumbprint cookies are like A BJILLION times better! First of all...the peanut butter flavor is just super amped up and perfect. And it's a pretty, sturdy cookie. Then I mean, ya know...you plop some chocolate pb dough on top. Maybe drizzle some melted chocolate. Yeah.

I will note that the dough is super soft at room temperature-so if you want a sturdier dough, refrigerate these bad boys. Either way, they're tasty deliciousness personified.

Something Saturdays (3/22/14)

First of all, I want to give you all a heads up: Next week I'll be posting on Tuesday and Thursday (as opposed to my usual M-W-F schedule) as a part of celebrating in #chocPBday (uh yeah, obviously it's gonna be good!)

Secondly: Michael is in Ohio (again). Today he's going on a tour of the facilities for where he would be working, with his would be supervisor. If all goes well with this (and if they get every part of his background check in time) then on Monday he will go in for another interview and HOPEFULLY get hired. And then hopefully he can go and get our townhouse. And then we'll finally know what's happening! In the meantime I'm gonna be trying to do as much and see as many people as I can! Like, tomorrow I'm finally going to meet up with Ashley from Baker by Nature! We're gonna go to Chelsea Market and it's going to be so much fun-eeee!

Oh and--have you seen this video of this guy singing Katy Perry's Dark Horse in 20 different styles (including Boyz II Men, Michael Jackson, John Mayer, Metallica, Nirvana....etc.)???! IT IS CRAZY COOL!

#MrsTsPierogies for Girl's Night! #MC

I participated in a campaign on behalf of Millennial Central for Mrs. T’s Pierogies. I received a product sample to facilitate my review and a promotional item as a thank you for participating.

I'm not the kind of person who goes out. I'm a stay in kind of gal, and one of my FAVORITE things is to have a big slumber party!! I do NOT have them enough (and I'm really pushing for that to be my bachelorette party main premise :P). They're always the best: you just need your girls, some great movies (preferably of the chick flick variety or--if you were me and my bestie in high school--old movies from the 40's and 50's), and good FOOD!

You may recall a previous blog post where I talked about one of my favorite quick meal/appetizer/snack/I'm hungry/ solutions: Mrs. T's Pierogies! They are the PERFECT addition to any get-together (whether you're the kind of person who is going to watch the game, or have a fancy dinner party, or enjoy a big slumber party, or just a Tuesday!) I always have at least 1 box in my freezer, guys. For emergencies.

And no matter your group, Mrs. T's is sure to have something for everyone! I mean...we're talking delicious whipped potatoes inside a perfect pasta shell. They have 11 varieties (including whole grain and mini sizes) with different additions-such as different cheeses, onions, etc. You can prepare them in SO many different ways, and the serving possibilities are endless-you can serve them as is, or with a sauce, or as a part of a recipe! My current favorite is the 4 cheese blend Pierogies with a dipping sauce of melted butter mixed with a little garlic powder and some scallions. Mmmmm....

So, my girls came over, we pajama'd up, I brought out 3 of my fave slumber party movies (27 Dresses, 13 Going on 30, and 10 Things I Hate About You), and brought out the food! We had a big assortment of Mrs. T's Pierogies, some popcorn, some cookies, some drinks (water for me, and whatever adult beverages my ladies brought for themselves :P) and settled in to laugh, girl talk, and half watch/half mock/half ignore our movies. All while chomping on food and pigging out. It was a GOOD. NIGHT!

Sometimes you see something so magical, that you CANNOT waste time in trying it yourself!!! This is the case of when I saw Crazy for Crust's brilliant idea to make Thin Mint S'mores. And well...I just so happened to have some Tagalongs hanging out in my freezer...soo...yeah. It had to happen. Tagalong S'mores.

Can we discuss Girl Scout cookies for a second?

I was a Girl Scout (all the way from Daisy, to Brownie, to Junior, to Cadet, to...well...Girl Scout)-it was such a fun time in my life. I was in a troop with my best friends, and all of our moms were joint troop leaders. Many good times were had. Including freezing and sitting outside the local Walmart, trying to sell some cookies. And oh...ohhh the competition of cookie sales. One year I sold the most (largely thanks to us purchasing like...30 some boxes. And many hungry neighbors. I was a great little sales lady) and boy, I felt SO proud. Like...probably way too proud. Anyway, due to this competitive nature, my family always bought a ton of cookies, which we would then store in the freezer and would last us all year long until cookie season came again! We always stocked up on quite a few flavors (lemon and shortbread for mom, and thin mints, tagalongs--or as we used to call them, peanut butter patties, and samoas for everyone else). My FAVORITE has always been Tagalongs.

Another amazing memory I have with the Girl Scouts (in addition to many other times in my life): cooking food over a fire (namely little pizza things)--ESPECIALLY, my old friend, S'mores!!! So...of course...it makes so much sense to mush together two of my childhood loves. SUCH a simple, and great idea. Chocolate, peanut butter, shortbread, toasty marshmallow.....mmmmmmmmm. You need to try this. With any cookies in your life. Just...go....go do it. And remember pigtails. And making Christmas presents. And camping in your friend's backyard. And earning badges. Remember childhood. :)


....dude....childhood tastes pretty sweet.... :P

Erm, Happy St. Patrick's Day? Ok....if you've followed my blog for at least a year, you're probably aware that I've dubbed myself the St. Patrick's day grinch. It's just like....a very "whatever" holiday to me to begin with. And then there's the whole people get mad at you if you don't wear green and I am not that into the color green. More than anything, though, it's the fact that it's essentially a big excuse to get wasted. And I'm really not into that. It kind of drives me crazy (I don't drink and I really don't like drunk people.) So, friends, forgive me. Dear Irish quarter of my family (hi Moore's!), forgive me. Let's just move along and discuss corn fritters, shall we? (I hope you all have oodles of fun today, regardless of my grinchdom, and stay safe!!)

These corn fritters are great because they're crazy easy to whip up, and they're baked, not fried, so-woot-healthyish! They're a gorgeous and impressive appetizer, snack, or side, and you can serve them in a bunch of different ways (salsa? guac? ranch? dipped in soup?) Use your imagination!

Now, unfortunately, they didn't end up being my favorite. They were great-crisp and full of corn flavor but...I don't know. For some reason they didn't do it for me. Michael, on the other hand, really enjoyed them (it's probably because he used sauces and I ate 'em plain due to my weird I-eat-stuff-plain palate). So, I definitely think they're worth a try. Especially if you're going to entertain! Set them out with a bunch of different sauces and you have a super fun and tasty little app. for the peoples. I'm pretty excited about the fact that I'll be able to bring food to family functions, now, and I know this is one that would be a crowd pleaser!

Something Saturdays (3/15/14)

Well, things are moving along. I just booked Michael his tickets to fly back to Ohio next weekend for the next phase (and hopefully final phase) of this process of getting the job. Hopefully they hire him while he's there and then we can reserve our townhouse and get. GOING!
I'm already starting to frantically think about packing and stuff we'll need for the new place...etc. My darling mother has this week bought us 3 new things we'll be needing: a kitchen/dining room table (which will be where I'm planning on doing most of my food photography) and shower curtains (one on left is for our spare bathroom, which will have some darker blues and blue-grays. The one on the right is for our bathroom which will be like an aqua with a few red accents--I want our bedroom to be red with aqua accents so that's sort of where I got that idea). What do ya think? (I think the table is ok, I'd prefer all wood but tables and chairs are EXPENSIVE and these were on sale at Kmart so they'll do for now, until we move into a house that we eventually buy someday.)

Meatless Recipes for Lent

If you're celebrating Lent (a Christian-specifically, in my case, Catholic-period of the Church year that leads up to the death and resurrection of Jesus) then you're probably aware of the whole "Don't eat meat on Friday's thing." And...if you're anything like me...this has always been a struggle. I LOVE MEAT. It's super hard for me to not eat chicken or a burger or some such (it's also hard to not FORGET that I'm not allowed to eat meat on Friday and then...whoops...too late). But, the past couple years I've succeeded in having completely meat-free Fridays for the whole of Lent. Hopefully this year will be just as successful! (errr...ok....last week I slipped up. But....from now on!)

To help keep me (and any of you who are also in need of assistance) on track, I've included a round up of my 8 favorite meat-free entree options on the blog. These are also awesome for anytime if you're a vegetarian or just want to cut down on your meat consumption.

Meatless Recipes for Lent
Brown Butter Pasta
  • A recent favorite, this pasta is SO quick and easy to make, you really have no excuse to not throw it together! Plus...I mean...browned butter....YUM.
Breadcrumb Crusted Cod
  • I don't like fish, so this is really more for Michael than for me. I made this last year during Lent and it's really such a simple and lovely recipe. 
3 Cheese White Pizza with Truffle Oil
  • Really any pizza you don't put meat on will work. But...this one is just SO GOOD! It's def. obsess-worthy.
Lasagna
  • I typically use meat and meat sauce in this lasagna recipe, but you can just as easily remove the beef and use a meatless sauce. You can also have fun and add in spinach, fried eggplant, etc!
Skinny Alfredo
  • Mmmm my new favorite alfredo recipe, AND it won't make you go up a pants size. 
Baked Fish Sticks
  • a healthier alternative to fish sticks or fried fish, so you won't feel bad eating it once a week :P.
Linguine con aglio e olio d'oliva (AKA "Oil Pasta")
  • This has literally been a staple in my family my entire life. It's the first thing I learned to make before I moved to NYC. It's really easy to make and extremely delicious.
Toasted Ricotta Gnocchi with Parmesan Truffle Cream Sauce
  • If you want to get gourmet on your Friday, this is SUCH a delicious recipe. It's rich and luscious and just....mmmmm....

Cinnamon Streusel Pancakes

These are the first pancakes that I have eaten in a very long time that didn't have chocolate chips and peanut butter. Because....streusel. Yummy. Wonderful. STREUSEL. So it's like a merger between pancakes and coffee cake: breakfast power couple. What I'm saying is...the pancakes are Shiloh Jolie-Pitt.*

*just kidding. They're pancakes. DELICIOUS pancakes.

I don't know that I've ever before bitten into a pancake and just marveled at how buttery it tasted. And then the delicious crunch and flavor of brown sugar and cinnamon....mmm it's enough to make your mouth water.

Look, ok, let's just say....if I were to open a restaurant, or host a brunch...

...these would certainly be made! Even Michael liked them, and pancakes are like his 3rd favorite of the sweet breakfast carbs (for him the order goes french toast, waffles, then pancakes. For me it goes waffles, pancakes, then french toast. Clearly no one can ever be satisfied).

There's only 1 downside...

The sheer QUANTITY of pancakes this recipe makes. If you have the skills to make large ones (which I do not) it'll yield 6, if you're like me and making medium ones, you're looking at 12-14 pancakes. That's a lot for 2 people to eat. It makes me long for the days when I'll have a whole family to feed. Or ya know...this fall when my brother will probably be living with us for a bit. Pretty sure that kid will eat everything in his path. This recipe would definitely be no problem for him to help demolish. In the meantime, freezing a few helps keep it manageable. 

Now, to serve these: I actually like them as is, or just with a little butter. The streusel adds plenty of sweetness and butteriness, in my opinion. Michael had syrup too, though, so it's really up to you! If you wanna be fancy with a little mound of butter like in these pictures, use a melon baller to scoop out some softened whipped butter.

And then you, too, can feel like you're fancy whilst in your pj's and watching Charmed on Netflix.

Just when I'm getting over all my nervousness about Michael's job interview on Friday, TODAY is his grad school interview. Sooo much presssuuuure. *deep breaths* Anyway. So. We're gonna keep the comfort foods rollin'. Mac n cheese=ultimate comfort. Cheez-its: one of my favorite snacks. PUT TOGETHER!

Now, I cannot take ownership for this idea. I got it from my girl Ashley over at Wishes and Dishes. But...oh MAN! How brilliant! Crunchy, cheesy crackers on top of your beloved macaroni and cheese! Now...I might have changed the recipe just a smidge in that....I...sort of browned the butter...I KNOW! I couldn't resist! I have a problem guyyssss!

But anyway. So. Let's chat. This mac n cheese is super tasty BUT very thick. It is 100% best eaten the day it is made. This is not a dish where it makes good leftovers. So, I suggest you make this yumminess if you're entertaining or have a decent sized family unit. 2 people is not enough. Nopes. Especially because Michael will forever be loyal to Velveeta, it seems. *martyred sigh*

Something Saturdays (3/8/14)

My Michael is gone. I am allll alone. But crazy insanely busy, so I'm trying to use this time to be ultra productive (because...let's face it...the boy makes me lazy.) His interview yesterday went well. However, not as well as I would have liked--turns out if he passes his background check (which he obvi. will) then he has to do a tour of the facilities and then if THAT goes well he has to do another interview! It's like...ugh...like they don't even care that he has to make a whole extra trip to Ohio to do these things. Anyway, fingers crossed we can get through that whole process quickly and he gets hired and then we can get this show on the road!

In other news, Susan (The Girl in the Little Red Kitchen) and I went to see a preview of Rocky the Musical on Thursday and it was actually really good! I got all goo-goo over the super sweet love story between Rocky and Adrian (and Rocky was pretty hunky--and also played very well. He did a great job of being true to the character but not copying Sylvester Stallone-not being a caricature. So, props to Andy Karl!)-and the way they orchestrated stuff like fight scenes and the training montage was just really cool! If you have the opportunity to see it, I definitely recommend it!

Aghhhh today I am SUPER anxious! Michael has his job interview and I am just hoping hoping HOPING it goes smashingly and he gets the job and he gets a great shift schedule and everything works out perfectly for the move and it all just falls into place...

Whatever. I'm anxious. You know what's an awesome cure for my anxiety?

Bread.

Making, baking, and eating bread. Especially when it's covered in roasted garlic that makes Michael turn to you and say, "What's this stuff? Cheese?" (at this point he's already tried it and declared that he liked it, so it was safe for me to say:) "Nope. Roasted garlic."

I've been dying to make focaccia* for quite some time now: I mean, it's a pretty simple bread, and it looks crazy delish.

*Side note: Michael and I got into a discussion on the correct way to say focaccia. He says "focasha", I said, "FocaCHIa" and I'm pretty sure the correct pronunciation is somewhere in between. Regardless, try saying focaccia over and over again...it just starts to sound ridiculous (as is the case with most words if you say 'em enough.)

Yeah. This recipe doesn't disappoint. It's sort of like a giant, chewy loaf of garlic bread. That's like...super...deliciously...garlicky. I love roasted garlic. And bread. We finished off these four loaves in less than a week. Just the two of us. I ate 1 whole loaf in that first day.

Whatever. No shame.

Decadent Brownies

Erm...I hope you're not fasting today (or that you didn't give up chocolate/sweets for Lent) because...

OH MY GOSH.
These. brownies. are the DEFINITION of decadent. So rich, so gooey, so RIDICULOUSLY chocolatey. I mean....20 oz. of chocolate (and 4 eggs, and 2 sticks of butter...) in ONE BROWNIE RECIPE! whaaaa??! Who does that!? Me. I did that.

I love rich, decadent desserts. You know this. So, when I saw a brownie recipe called "decadent brownies" and saw the supreme fudginess that is them, I knew these needed to be made! However....this recipe sat in my recipe file (yepp I have a word document full of recipes I wish to make...it's like over 300 pages long...eeesh) for years. So long, in fact, that the original blog I found it on? Gone. Nowhere to be found.

Decadent Brownies
Now, that said, I totally had to re-work this recipe quite a bit. The directions were sort of all over the place and vague but I figured it out and tweaked and came up with the lusciousness you see before you. These brownies are just...like...when you take a bite of them it's just soft chocolateyness. I couldn't think if the correct word to describe their texture...but...melt in your mouth comes to mind. (And when cold/frozen the texture is VERY similar to fudge.) If I drank milk....these would require a glass. But, my constitution is totally ok with all the richness so I'm cool. Even Michael liked them and you know how he can be with desserts that aren't to his "refreshing" liking. But no one can resist these brownies.

NO ONE. So don't even bother trying. Just give in.

  • Youth-no likey.
  • Adolescence-in theory they were kind of sort of ok, but only when raw.
  • Beginning of young adulthood-Likes onions in salads and is a BIG fan of scallions (aka green onions) pretty much all the time. Will eat onions in stuff (such as soup, mac n cheese, etc. etc.), but still not into onion rings.
  • Now-OMG onion rings are soooo yummmyyyyyyyy! 
Crispy Baked Onion Rings
I recently hopped on the onion ring bandwagon (as my earlier list shows) and I find I especially love crisp onion rings made with Vidalia/sweet onions. Because....mmmm just SO good! But...onion rings are fried. Therefore....not something that I was too happy that I've begun to like. Because my waistline does not need me to suddenly add a new fun food to my diet that's bad for me.

BUT this recipe saves everything! It's ok! It's ok that I like onion rings! These onion rings, however, are MUCH more than just ok.
Crispy Baked Onion Rings
They. Are. PHENOMENAL!

I was so scared making these, because Michael tends to scoff at any recipes that try to healthify a beloved food (he LOVES onion rings). But my worries were unfounded because he looooved them! 

They are so crispy, so flavorful, there's seriously nothing not amazing about them! You'll never believe that they are baked not fried! I mean...maybe you will believe it, but you will not miss the fried ones because these are just sooooo good. Agh I could just squeal and talk about the tastiness forever, but....why don't you just see for yourself? MAKE EM.

Something Saturdays (3/1/14)

Well. It's March.
Dear March, please be better than January and February. PLEASE.
It got warm and then super cold again. Blech.

In other news, now that the move is becoming more of a reality we've been starting to make preparations. It's super overwhelming but exciting....and I keep vacillating between being extremely stoked to move and wanting to get the heck out of NYC and being nostalgic and wistful. It's a weird time. Anyway, Michael's interview is coming up on Friday, so fingers crossed he gets it!
