Homemade Cheddar Pierogi {with Caramelized Onions}

Homemade Cheddar Pierogi {with Caramelized Onions}
This is a big one, guys. This is one of those recipes that like...changes your life. Ok...maybe that's dramatic.

...OR IS IT?
Homemade Cheddar Pierogi {with Caramelized Onions}
No but forrealsies, these are definitely a new favorite. Turns out-making homemade, from scratch, pierogi isn't that hard (I will admit that it dirties a lot of dishes, but it is TOTALLY worth it!)

Now, first of all, if you aren't familiar with pierogi: they're pretty much a pasta that is filled with mashed potatoes (and, in this case, cheddar cheese) and usually served with sauteed or caramelized onions. There's a bunch of variations but, in my opinion, this version is the best.

The pasta shell is tender. The cheddar mashed potato filling is perfectly flavorful and comforting. Sauteeing the pierogi in butter after boiling makes the texture and flavor even better. And serving them with caramelized onions is just perfection. I'm legit. obsessed. Michael is too. He took one bite and gave me a wide-eyed look, "These are amazing!" He was impressed. I was sort of impressed. You'll be impressed. If you need a perfect pierogi recipe-look no further! Or, if you just want a new idea for dinner tomorrow-also look no further! You need homemade cheddar pierogi in your life!

I'm not the kind of person who goes out. I'm a stay in kind of gal, and one of my FAVORITE things is to have a big slumber party!! I do NOT have them enough (and I'm really pushing for that to be my bachelorette party main premise :P). They're always the best: you just need your girls, some great movies (preferably of the chick flick variety or--if you were me and my bestie in high school--old movies from the 40's and 50's), and good FOOD!

You may recall a previous blog post where I talked about one of my favorite quick meal/appetizer/snack/I'm hungry/ solutions: Mrs. T's Pierogies! They are the PERFECT addition to any get-together (whether you're the kind of person who is going to watch the game, or have a fancy dinner party, or enjoy a big slumber party, or just a Tuesday!) I always have at least 1 box in my freezer, guys. For emergencies.

And no matter your group, Mrs. T's is sure to have something for everyone! I mean...we're talking delicious whipped potatoes inside a perfect pasta shell. They have 11 varieties (including whole grain and mini sizes) with different additions-such as different cheeses, onions, etc. You can prepare them in SO many different ways, and the serving possibilities are endless-you can serve them as is, or with a sauce, or as a part of a recipe! My current favorite is the 4 cheese blend Pierogies with a dipping sauce of melted butter mixed with a little garlic powder and some scallions. Mmmmm....

So, my girls came over, we pajama'd up, I brought out 3 of my fave slumber party movies (27 Dresses, 13 Going on 30, and 10 Things I Hate About You), and brought out the food! We had a big assortment of Mrs. T's Pierogies, some popcorn, some cookies, some drinks (water for me, and whatever adult beverages my ladies brought for themselves :P) and settled in to laugh, girl talk, and half watch/half mock/half ignore our movies. All while chomping on food and pigging out. It was a GOOD. NIGHT!

If you want to have your own amazing night, I definitely recommend some Mrs. T's Pierogies. They could NOT be simpler to prepare, and they're always a hit! And check out Mrs. T's Facebook and Twitter pages too, let them know how YOU'RE eating your pierogies!

Pierogies Au Gratin-Mrs. T's Pierogies Review

Pierogies Au Gratin-Mrs. T's Pierogies Review

Hey! What about that Super Bowl yesterday...I mean...it was....right? Yeeeah.

...I don't know what happened.
Pierogies Au Gratin-Mrs. T's Pierogies Review
You know what I do know things about? TV shows. And movies. I've already made it clear that I'm super into the idea of my bachelorette party being a big slumber party where we watch movies. Really, if I'm hanging out with my friends, that's all I need. The rest is just details...well...except for the food. The food is like the most the 2nd most important part of a get together.

Whether I'm sitting down to watch Orange is the New Black (or whichever show) by myself, or with my buds, Mrs. T's Pierogies are always there for me.

Now, you know me. I'm not generally into eating frozen food. But-I AM NOT KIDDING-when I was approached to work with Mrs. T's...I already had 2 boxes in the freezer. For myself. They're my solution for when I need something quick for myself. Or, something still-pretty-quick-but-slightly-less-quick, for entertaining.
Pierogies Au Gratin-Mrs. T's Pierogies Review
Such as pierogies au gratin.

But before we spiff em up, let me explain what Mrs. T's pierogies are all about, if you're not familiar. They're yummy whipped potatoes combined with additions (Mrs. T's has 11 varieties-including whole grain and mini kinds-so some of these additions include onions and cheddar) and then they're "gently folded" in a pasta shell. There are SO many different ways you can prepare the pierogies, and different ways you can use them! Honestly, I usually bake em and then serve with a little butter. Easy and delicious. However, if you wanna do something special, there are so many ways you can use 'em! I went on to Mrs. T's website and looked through the recipe ideas before stumbling upon the pierogies au gratin. I tweaked the recipe just a smidge and it turned out DELICIOUS-beautifully cheesey and just so comforting. Nothing not to like. It's like if macaroni and cheese and potatoes au gratin got together and had a baby. A delicious baby....that's not an actual baby. Just pierogies n cheese. Calm down. And also, check out Mrs. T's facebook and twitter pages while you're at it!
