Chocolate Chip Cookie Dough Pudding

Ok let me just tell you right off the bat: there is no cookie dough in this pudding. 

BUT don't be disappointed! I was skeptical that pudding could just...taste like chocolate chip cookie dough. But it really really does!!

Brown sugar, vanilla, and a little bit of butter help flavor this silky smooth pudding in a way that is seriously like you're eating cookie dough in pudding form. And chocolate chips help (although I'm a weirdo who prefers to not have chocolate chips in my cookie dough, so I mostly just ate the pudding chip-less. Michael thinks I'm crazy.)

Speaking of Michael, he was also pretty skeptical when I told him about the pudding. He wasn't too sure about it. But then he took a bite...and another....and another. And he said, "Ah...I get it." 

So he gets delicious cookie dough pudding. So do I. So will you!

The ageless struggle: do I bake these cookies or just eat all this delicious dough?

It's plagued us for eons. 

SO-when I saw my girl Baker Bettie's post with Chocolate Chip Cookie DOUGH Cookies...I mean...I HAD TO TRY THEM! Obviously. Who are we talking about here? MEEEE.

As it turns out...this is more of a method than a recipe (although the recipe below uses Baker Bettie's fave chocolate chip cookies and is pretty darned awesome)--it's essentially just baking the cookies at a higher heat for a shorter time so that they're delightfully underbaked inside. Turns out...I've done this (partially by accident) many times in my past so I was actually pretty familiar with it. No complaints, though! I am never going to turn down a warm, ultra-gooey cookie (plus, they're pretty gooey even when not warm)! Now...is it what I thought? No--for the best-of-both-worlds between cookie/cookie dough I'm sticking with my cookie dough balls. BUUUT...again...I got to eat some tasty tasty cookies because I made these. And I'm never complaining about that. And if you haven't tried this method already...you should def. give it a shot--at least once! Put it on your bucket list or whatev.

I'M BACK I'M BACK I'M BAAAACK! Didja miss me? Did you miss the food I shared? I hope all the answers are yes, because I missed you guys! And I'm so excited to be back and-even though I am not 100% caught up-I definitely feel less behind. So yay!

And this first post back is extra special because I am guest posting for my wonderful friend Zainab over at the Blahnik Baker while she takes some time off for maternity leave to spend time taking care of her new little man, Elliott!

This recipe is a good one too, y'all! Usually I'm fairly lukewarm on creme brulee but not this one! No, this completely overwhelmed me and created an addiction that led me to be very sad that this recipe only makes 5. Because that is not nearly enough. You break through a gorgeous layer of crisp caramelized sugar, giving way to luscious vanilla custard, and then...then...there's rich and delicious chocolate chip cookie dough. It's pretty much the bestest thing ever.

Chocolate Chip Cookie Dough Cupcakes-Cupcake Day!

As you may be aware...I only have 2 cupcake recipes on this blog. Which is crazy, I know. It's just....cookies....ya know? BUT I am so excited that I got an excuse to make you guys another cupcake because today is CUPCAKE DAY! I mean...not officially...but myself and some other bloggers dubbed it such because we're all sharing cupcake recipes. You get the idea. It's a good thing.

And look....I'm gonna tell you straight up....I registered for some piping tips and pastry bags. Because...I mean...look at that frosting. I apologize. These turned out way prettier in my head. Try your best to forgive me lack of decorating skills, mk? Thanks, guys. You're the best.

These cupcakes led to Michael's co-workers accusing me of witchcraft. This is due to my, apparently, delectable treats + the fact that the cookie dough inside the cupcake "magically" didn't bake. 

I'm not a witch (in spite of my Sabrina the Teenage Witch and Charmed loving young self's hopes and dreams). And I'm not even a magician who will protect my secret. Because it's not a secret-it's just a filling! You add the cookie dough into the cupcake after it's baked (I used the "cone" method that's detailed below as well as in this post---and, for the record, thus far those are the only cupcakes I've made that I've really been super into. But that makes sense because choc/pb cupakes are usually what I like best when I buy them, too.).

They are pretty tasty, though. There's a gorgeously fluffy brown sugar cake that you fill with the eggless cookie dough and top with-my favorite component-the chocolate chip cookie dough frosting. That frosting is the bomb dot com. Best part. Now...as previously stated....I'm not obsessed with cupcakes. I just wasn't head over heels for the cake itself (there's nothing wrong with it, this was just my own general "meh"-ness about non-chocolate cakes) and Michael is attempting to cut back slightly on the sweets (he'd like to not think he's fat in our wedding pictures-he's not fat for the record). And that is why these were sent to his work, I was accused of witchcraft, and they were devoured within 20 minutes of Michael getting there. I'm spoiling his co-workers and I'm okay with that.

Chocolate Chip Cookie Dough Brownies

"Oh and Mike likes decadent desserts like you. Like...brownie sundaes with chocolate and caramel. So if you want to whip up something- that'll prob win him over real quick ;) haha."

So read the text (more or less) that I received from my best friend a couple days before I got to see her for the first time since moving back, and before I'd get to (finally) meet her boyfriend.

Decadent dessert you say, hm?? Brownies, hmmmm?

It was my duty as a BFF to make Alex's Mike (and yes, I realize our boys have the same name. He, however, is Mike. Mine is Michael. Soooo yeah.) cookie dough topped brownies. Like...I had no choice.

So that is what I did. The next day I whipped up these cookie dough topped brownies to give to Mike and Alex. In a way...it was sort of the best thing I could have made. You see...Alex and Mike have been together for like...4 years-ish. And I just now finally met him. And...you see...these brownies? One of the first blogger recipes that I bookmarked. Probably a similar amount of time ago. And I just now made them.

The brownie base is really rich and dense-so delicious. And then you top it with an eggless cookie dough?

So rich and so decadent...you really only need a tiny piece (and that's coming from me!)

I also gave some of these darlings to Michael's co-workers. It's like I'm the Mother Theresa of cookie dough brownies*. Apparently they made such an impact that they're still talking about how "Michael's 'wife' makes the best brownies!" ohhhh yeah.

*(that seems sacrilegious or some such...I apologize)

The only downside? I feel like you can't taste the cookie dough enough because the chocolate brownies sort of take over. However, I voiced this concern to Michael, Alex, and Mike and they all said I was crazy.

Well...technically Mike said "Just turn it upside down so the cookie dough touches your tongue first."

We were impressed by his genius idea. To which he stated:

"I'm an engineer."
(he really is)

So there ya have it. Endorsed by an engineer.

Peanut butter thumbprint cookies are a classic, they always make me think of Christmas-time. But...these thumbprint cookies are like A BJILLION times better! First of all...the peanut butter flavor is just super amped up and perfect. And it's a pretty, sturdy cookie. Then I mean, ya know...you plop some chocolate pb dough on top. Maybe drizzle some melted chocolate. Yeah.

I will note that the dough is super soft at room temperature-so if you want a sturdier dough, refrigerate these bad boys. Either way, they're tasty deliciousness personified.

Happy day before Thanksgiving! I hope all of your preparations are going smoothly and no stress is going on. I know it's a bit of a pipe dream....but I still hope it's true :P With all the stress and drama that can come with big events like holidays, I think today we should just focus on pure, simple, easy, perfect, yumminess.

In the form of s'mores. Made with eggless cookie dough. In 3 (and potentially more) different ways. YES.

I'm gonna lay a little math on ya:

2 wrongs DO NOT=a right.
2 awesome things DO=EPICLY AMAZING THINGS

S'mores=GOOD.
Cookie Dough=GOOD.
Cookie Dough S'mores=GOOOOOOOOOOOOOD.
3 DIFFERENT KINDS of cookie dough s'mores=EPIC!

If you're Kayle, and you're staring down the idea of adding egg-less cookie dough to a s'more...you can't just leave well enough alone. That evil little part of your brain says "Mmm what if you used dark chocolate? AND OH! Add some sea salt on top!" and then "You do have some of that homemade nutella in the refrigerator too soo...that should probably happen." and then "Darnit. We're out of salted caramel sauce. That probs would've been amazing. Ughhhh. Why is life so unfaaaaair?! #firstworldproblems"

So uh yeah. I took some homemade graham crackers (because duh) and then I made my 3 kinds of s'mores-one with some milk chocolate, one with dark chocolate and sea salt, and one with nutella.

Are you surprised?? I kind of was-when it comes to s'mores I tend to be a purist and love the classic milk chocolate and, while that was scrumdidlyumptious....holy cow, cookie dough + graham crackers +toasted marshmallow + dark chocolate + sea salt=OH MY GAWWWWD FANTABULOUSITY! Just...such a perfect combo! They were all friggin fantastic though. And now all I want to do is make tons and tons of different kinds of s'mores...

...this doesn't bode well for my desire to lose weight probably...does it?

*shrug* Whatever. Make cookie dough s'mores. Your life will never be the same.

I had to kick off #cookieweek with a cookie OVERLOAD! You're pretty much getting 3 cookies in 1: 2 cookies, plus a filling of cookie dough. But these aren't just chocolate chip cookies or cookie dough, oh no, they're made with browned butter. And sea salt. AKA 2 of my most favoritest things to do to cookies.

Funny fact: these cookies are, in my opinion, best chilled. Which goes against most of my cookie preferences. But for whatever reason, the combo of cookies plus cookie dough just tastes better cold.

So, take a bite. A big bite. A bite that will cut through delectable cookies, a bite of sea salt, and a creamy, decadent, browned butter (eggless) cookie dough filling. It's like an experience. Possibly a healing one. I mean, I'm not saying these cookies will fix you but...ya know...I'm not saying they won't either.

Ok, let's just address the elephant in the room (OMG I WISH THERE WAS AN ELEPHANT IN MY ROOM!...sorry...I love elephants...off topic...): I know. That whipped cream on top of those waffles...*sigh of embarassment* looks like a poop. UGH! I'm sorry! I just...I didn't mean for this to happen, but it did. This teaches me the lesson that I need to get myself a piping tip. Ugh. Ok, anyway, now that we've talked about it, let's just try to forget about it and move on, ok? Ok, great. Thanks for being so mature about this.

Anyway, I've been lusting after The Cookie Dough Lover's Cookbook for quite some time now. And, thanks to the AMAZINGESS of one of my newer bloggy buds Zainab (AKA Blahnik Baker) I now am in possession of my very own copy! EEE! One of the very first things I made from my beautiful new cookbook was these cookie dough waffles. But um...even though they are clearly not a healthy brekky, I still attempted to make them a little less inappropriate for morning times. Essentially I used some whole wheat flour and subbed in STAR'S new Butter Flavored Olive Oil (more on that in Friday's post) in for the butter in the waffles. Super easy swaps and I still ended up with amazing waffles that were chewy and deliciouuus!

Now...these waffles were yummy. Don't get me wrong. But....the cookie dough was sort of barely present, I assume since the dough got all cooked in the waffle iron. Plus this makes A LOT of waffles. So, unless you have a small army (or ya know...a family) to feed, maybe decrease the recipe. But I gotta say, this is a DEFINITE show stopper. Nothing like tellin' people "Oh hey, I made cookie dough waffles topped with some chocolate whipped cream..." Yeah...I can practically see the drool already.

There's fancy, and then there's fancy. These truffles were pretty amped up to begin with but I maaay have taken them to the next level. Oh yeah.

But I'm getting ahead of myself (as I've been known to do).

Obviously, I love cookie dough. And I love cookie dough truffles. But THESE...are just like, in a league of their own.

First...you brown butter. And that butter is not alone. Oh no. While you're browning the butter, there are also vanilla beans in there. If you think brown butter smells amazing...I can't even begin to explain how PHENOMENAL browned butter and vanilla beans smell. It's like...the best smell ever. I wanna bottle it. And wear it....of course then I'd be hungry all day...hmmm.

Anyway, then you make a fairly classic, eggless, chocolate chip cookie dough with that browned butter (and there's some heavy cream in there too...in case it wasn't rich enough before). BUT I added the delicious twist of, instead of chocolate chips, I folded TCHO's chocolate covered cocoa nibs into the dough. This was Michael's favorite part.

And then you coat the little perfect dough balls in dark chocolate and sprinkle coarse sea salt on top.

The first bite is....dare I say...foodgasmic (it's the best word to describe it).
Just like...the most rich, sweet, salty, flavor explosion.

I can't even get over how amazing these were. 

But, I was worried they'd be too much for Michael, that he wouldn't like them as much or something. But he totally fell in love too. His first bite, I could tell from his face, pretty much changed his life. And he loved the crunch from the cocoa nibs. And ever since, he hasn't been able to stop talking about them. Me either.

Just...stop. Stop reading. Run and make these. You simply must.

I know I already complained on Monday, but (and Michael will vouch for this) I'm a bit of a whiner.

So excuse me while I whine about the fact that I STIIIIIL DO NOT HAAAAAVE THE COOKIE DOUGH LOVER'S COOOOKBOOOOOOK! It's not faaaaair! whyyyy?! WHY DON'T I HAVE IT?!

I love the blog Love & Olive Oil and when I found out Lindsay (the lady behind L&OO) wrote a cookbook ENTIRELY ABOUT COOKIE DOUGH it became my #1 must have item. 

Then time passed. More time. And then some more.

And I still do not have it. It's like...probably a crime against nature.

I mean, I've been pretty clear about my cookie dough obsession, yeah? Remember that recipe for eatable cookie dough? Or those peanut butter cookie dough brownies? MMm or those chocolate chip cookie dough balls. The only reasons more of such recipes haven't graced this site is because I'm just so depressed over my lack of cookbook.

Luckily, a few of the recipes from that much desired cookbook have found their way onto the internets. This recipe is one of those recipes. Cookie dough truffles. Oh yeah.

As I was just typing that line...I had major deja vu. Have you ever had that? So crazy. I literally dreamed like a whole moment of time, and I dreamt it last night and it happened today! Weeeird. 

Anyway, sorry, back to cookie dough. These truffles are great for multiple reasons.Obviously...they're cookie dough...covered in chocolate. WIN. And, no bake, awesome for summertime! And they're so little you can just sit down and pop them in your mouth one by one and then you look down and....

...oops, they're all gone. :)

I'm a bad blogger. And a bad friend.
Because you NEED these in your life, A-to the-SAP!

One of life's biggest questions-cookie dough or cookies?

Personally...I love both. And try to keep a healthy balance of both in my life. But no matter what...I feel a little cheated. When I'm making cookies and eat a bunch of dough, I'm then upset that I will have less cookies. But when I decide to only have a teensy bit of the dough, I lament the loss of the delicious dough that got away. With these, you will not have such problems. You get the best of both worlds!

Cookie: Firm, cooked exterior. Warm and melty chocolate chips.
+ Dough: Dough flavor and texture in the center.
 = HYBRID: A warm, gooey, cookie dough/cookie marriage made in heaven!

I'm serious, I love these. So much so that, after making them for the first time, I immediately made another batch. Addictive as hell! And, AND you can just have a bunch of these little frozen dough balls in the freezer, waiting around, chillin' out (HA! Pun INTENDED!), and when you decide you need some good cookie/cookie dough lovin', you pop em in the oven. Bake em for just a tiny while then IT'S COOKIE DOUGH BALL TIME! *happy dance*

Obviously you do-because we all know that is like...70% of what ends up on this blog.
Do you also like peanut butter?
Chances are good you like that too.
What about cookie dough?
C'mon....who doesn't like cookie dough? Am I right?
Even if you think you don't like some of those things, these brownies may change your mind. I fed some to a friend of Michael's (who was being a sweetie and fixing my computer), and he is not a pb fan, but he LOVED these brownies. Like-went crazy for them. Told Michael he'd better marry me. He also was sad after he was done eating it. We've all been there.

Now...these brownies will cause you to have to do a lot of dishes. And they're super rich. And probably (definitely) not good for you. But they are SO worth it! It's like...a fudgy brownie + peanut butter cookie dough + thick, delicious chocolate ganache=YUM. (It actually tastes fairly similar to a certain Buckeye Cake.) I needed to use some of the peanut butter I had laying around the house (PB Crave, specifically), so for the peanut butter cookie dough I actually used PB Crave Cookie Nookie--so the cookie dough factor was amped up. But you can totally use whatever peanut butter you like. If you have some cool flavored pb's this is a super fun way to experiment with diff. combinations.

THAT'S IT! I CAN'T WAIT ANYMORE!
I CANNOT WAIT ONE MORE DAY BEFORE I SHARE THIS RECIPE WITH YOU!

Cookie dough. Wonderful, delicious, chocolate chip cookie dough-that is for the sole purpose of eating. This dough has no desire to be baked-its entire reason for being is just for you to eat it in its perfect, dough, state. AND-even though I have tempted salmonella on multiple occasions by eating regular cookie dough-this is safe. No eggs. No worry about dying (not that I worry...but Michael is oddly concerned). And it tastes exactly the same. You cannot tell the difference. It only dirties one bowl (especially if, like me, you totally just attack it with the spatula you used to mix it right from that bowl). Another perk-you can totally tailor it for how you like your dough. More into a thick cookie dough? Use less water. You don't like to eat chocolate chips in the dough? Don't put them in! Want to mix something else up in there? GO RIGHT AHEAD! I probably make this more often than is healthy. But...c'mon....it's cookie dough.
