Apple Cinnamon Baked Oatmeal
Another baby/toddler approved recipe--that's also endorsed by the hubby. This oatmeal is awesome because it is super versatile, you can totally play around with it a bunch, and it's healthy AND tasty! And-bonus for a busy parent or any busy adult-suuuper quick and easy to make. You just mix everything together, spread into a pan, and bake!

I love baked oatmeal-I think it's so comforting and tasty and I like that it's not as messy as unbaked oatmeal, lol. James loved this too-it's nice and filling and flavorful. I haven't made it in awhile now and the only reason for that is a current "bopple" (AKA apple) obsession that little man is going through. No apples survive his appetites long enough to end up in anything else. He so much as glimpses an apple and he immediately starts clamoring for "BOPPLE BOPPLE BOPPLE!"

But I swear as soon as I figure out how to successfully hide an apple from his little eagle toddler eyes I will be making this again!

So you know how sometimes you can't tell the difference between cucumbers and zucchini at the grocery store and so you end up with 3 cucumbers and you and your husband don't even like cucumbers (and your baby tolerates them slightly, at best)?

No...just me?

Oh. Well...that happened. So I needed to find something to do. And I found a way to make baked cucumber chips. Which intrigued me.

They're actually super simple to make and you can have fun playing around with different seasonings! I originally intended for James to enjoy them but the texture was tricky for him. Luckily, Michael really ended up liking them and they were gone before I knew it! I'm always down for a healthy way to have a crunchy snack.

I've got another baby-approved recipe for you!!! These pancakes are AHHMAZING for everyone because they're super quick and easy to whip up and so healthy AND delicious!! Seriously, Michael and I both loved them almost as much as James (it's hard to compare to the amount of enthusiasm that little guy had for these pancakes. He devoured them in no time flat!) They also freeze great, I made a big batch and then froze most of them so I could easily just take one out and microwave it anytime little man needed his pancake fix.

I just love how healthy these pancakes are, they're mostly just bananas and oats! And you just blend all the ingredients in a blender: COULD NOT BE EASIER. I also added blueberries for my boys and because I'm a grown up and I can-and I don't dig blueberries-I added chocolate chips for myself. These were actually one of the first foods that baby James got excited about (he ate 2.5 pancakes in one sitting) and no one can blame him. You'll love them and feel good about eating them/feeding them to your family!

3 Ingredient Peanut Butter Banana Oatmeal Cookies {Baby Led Weaning Recipes}

James is 9 months old which means we've been on our baby led weaning journey for about 2 and a half months. I'm not going to try to sell you on it or be terribly informative I'll just sum it up by saying: when babies are at least 6 months old and able to sit up unassisted you offer them table foods, usually whatever you're having-just cut appropriately(aside from choking hazards, like nuts, or things babies can't have, like honey)-instead of doing purees. There's a bunch to it and I highly suggest you look into it if you're interested, I've loved it. Anyway, thanks to BLW James is an awesome eater and I get to have tons of fun making him lots of different foods. But I also want him to be healthy, so he hasn't had any real desserts yet. His kind of desserts are like nice cream (AKA blended frozen bananas that have the texture of ice cream) and these cookies. Which I'm good with. And, frankly, they ARE tasty. So he's not missing out!

I mean, clearly he couldn't keep his hands off them:
3 ingredients: oats, peanut butter, and bananas. That's it. It's pretty epic. And not just for babies! I would have called them "breakfast cookies" prior to mommy-dom and been perfectly happy eating them then, too. This recipe is super duper insanely easy to whip up and it's also very customizable-you can add in all sorts of mix ins and sub out different nut butters if peanut isn't your thang. You can even add some maple syrup or honey if you feel like they're not sweet enough. Let's be honest, if these had just been made for me they would have had chocolate chips. But James is not ready for chocolate, he'll love it too much. Gotta keep some surprises for him. So for now he'll happily munch away on his special little baby cookies because they're tasty and I'll be happy that they're healthy! Win win win win!

Roasted carrots have changed my life.

I mean...as much as carrots can change your life, I suppose.

You know me, I'm never super excited about veggies. Carrots are one of the few I like, but up until now I thought I only really liked raw carrots but NOW...oh now I know the magic of roasted carrots.

(Thanks to Michael's stepmom Jeanne who brought some over with a dinner she made for all of us and totally turned my vegetable world upside down.)

Guys...they're delicious. They get all caramelized around the edges and have the perfect combination of sweet and salty. They're tender but still with some crunch. They're an awesome side dish and super easy to throw together. And I've made them a ton of times already and now I want to make them again!

Yepp, my spoiled husband got me to make him more ice cream. And, once again, it's dairy free (and, incidentally, vegan) so that he can eat more of it without worrying about his tummy. AND for all of you peoples with the New Year's resolutions--this is probably right up your alley!

This recipe made me extra happy because it's like healthy ice cream (actually, to be exact, it's sort of like a cross between an ice cream and a sorbet, texture-wise. Not quite as creamy as ice cream, but not quite as icy as sorbet.) It's legit just like strawberries, a liquid sweetener (such as agave nectar, honey, maple syrup, etc.), coconut cream, and non-dairy milk. It's pretty awesome. And Michael looooved it.

I will admit, part of what Michael loved is that I topped the ice cream with homemade magic shell...so it was like a chocolate covered strawberry situation. Still, though. Healthy. He's happy. I'm happy. The only reason we're not happy right now is we finally ran out of it (and this recipe makes a good amount, so it took us awhile) and now he's all ice cream-less and I'm stuck with debating if I'm going to make him more or buy him some or make him just live without ice cream because gosh there's a baby coming and I've got bigger fish to fry than ice cream!

But...I mean...I'll probably just make some more of this because it's awesome. (AND unlike some other dairy-free/vegan ice creams it actually scoops pretty easily straight out of the freezer! WOO!)

I'm going to start off by saying...mmm...these aren't the bestest burger buns. They're delicious bread and they'll work as buns but Michael will attest that they're not very...bun-like. If that makes sense? But he's picky. I know I'd love to eat a sammie on these, and I think you should consider them!

In the scheme of bread recipes, this is pretty standard-not terribly difficult, and not too much rise time. The whole thing should take less than 3 hours. And the rolls are lovely and have a nice balance of whole wheat flavor, without being overwhelming, and a perfect, chewy texture.

I mean...Michael said it was tasty bread. He just wants processed store-bought white buns. *sigh*

I made chicken noodle soup! And it wasn't so bland that it was borderline inedible! IT'S A MIRACLE!

...er...I know...you're probably all, "Kayle whaaaat are you talking about??" Well...I had a few unfortunate attempts at chicken noodle soup, a few years back, and they sort of scarred me for life and terrified me from making soup. Then I made some ridiculously yummy soups. So then it was just the basic CNS (chicken noodle soup, get on my level) that I was afraid of. Buuut...then I saw a recipe for homemade CNS in the slow cooker and I was like, "OK. It's time. Let's break this curse."

I'm going to warn you all RIGHT NOW-this recipe makes like...a lot of soup. Much more than just Michael and I can really handle, BUUUUT you can freeze it. Like...so I poured it in a freezer bag (made sure it was upright and not going to leak) and let it cool COMPLETELY. Then I sealed it and flattened it and put it in the freezer. I now have a nice, flat, bag of CNS just waiting for when I need it. Which I sort of love. You never know when a random cold is going to hit! Or just a craving for some soup. And sometimes you're too busy (or, God forbid, sick) to make something and having that extra stash of soup in the freezer makes me feel safe.

This week we got our first substantial bit of snow. And it happened literally the day after we finally bought a snow shovel. You see....we've been meaning to buy one for a while. But Michael was being super picky about it and didn't like any of the ones we'd seen. However...time passed....winter came...and I started to get nervous that we'd be stuck with a bunch of snow and no way to shovel it out of our new driveway. So we finally agreed to just go and buy one. And so we did. And then we woke up the next morning aaaand snow. So our new little shovel got christened quickly.

And you know what's fun to do? Sit in your new kitchen, looking out at the snow, but knowing you're snug and warm inside, and eating from an even warmer bowl of comforting and classic chicken noodle soup.*

*With lots of crackers. Because that's who I am, as a person. I eat soup with lots of crackers. (Not as many as my brother, who usually just consumes moist crackers since there are so many that they've fully sucked up the soup...that's a bit too far for me.)

Lately...I've been craving guacamole. And I haven't been able to get it (I keep meaning to go to this one Mexican restaurant we love but it hasn't happened yet) so...I finally just decided to make my own. Because that's what we food bloggers do. Or...at least...that's usually what I do. And really...there's no reason that all of us shouldn't make our own guacamole! IT IS SO EASY! And insaaanely quick to make!

Funny fact--apparently my dad and grandma (heck..probably all of my grandparents) have never tried guacamole. And one time (a time my brother and I still enjoy a good giggle over) my mom pronounced guac "GWYE-ACK" (admittedly on accident--she does know how to correctly pronounce it). So...I don't come from a particularly adventurous food background. But somehow...I love guacamole. And I am so happy that I do.

First a little tip on avocado ripeness--you're going to want the avocado skin to be very dark and have give when you squeeze it. If it's suuuper soft when you squeeze it-it may be over-ripe, but you can still cut it open and use any parts that are still green and not brown! Another tip for good guac is DO NOT BE AFRAID OF SALT! Seriously...you're gonna want to be generous. And also, this recipe is definitely one of those taste and adjust sort of situations--some of the ingredients aren't going to have amounts because you should sort of just add however much tastes good to you, you know? I know the first time you make something that is super frustrating but I promise after you make it once and figure it out...it just makes sense!

Oh and after you've made the guacamole, if you don't finish it and want some leftovers and are concerned about it turning brown here's another little tip: spray the top of the guacamole with cooking spray and cover the top with plastic wrap (so that the wrap is pressing on all of the guacamole)--it helps!

Avocadoes are potentially the only thing that I like and Michael doesn't, so I had to eat all the guacamole myself. Which...even though it didn't look like much...it actually was. So this might be best to serve if you're entertaining or have at least a couple people to eat it--because I had a difficult time finishing it by myself. 

Also--don't limit yourself to eating this deliciousness with just chips! Quesadillas, flautas, and even french fries are so good dipped in the guac and it's also tasty on sandwiches!

Guacamole is too good to only enjoy one way.

I know. I disappear for 2 weeks and then I come back to you with vegetables. Like...who am I even?

Don't worry, I'm still me. I made this for Michael :P

BUT I tried some and actually didn't mind it. And it was a super simple thing to throw together as a healthy side dish for the boy. You're gonna agree-trust me!

Michael was a little wary at first...he said it looks like minestrone soup (of which he is not a fan). I informed him that it was literally just some garlic and chopped tomatoes and zucchini with some seasonings. He gave me a suspicious look and took a bite...

...and he was pleasantly surprised! "This is REALLY good, actually!" he said.

*huff* I can't believe he doubted me.

SO don't you all start doubting me either! This is seriously the simplest (and most adaptable) weeknight skillet idea that works as a side or it could even be an entree if that's your thing (whether you're a vegetarian or if you wanted to mix in some cooked meat with the veggies). You can also of course mix up the vegetables according to your preference but the zucchini and tomatoes really worked out nicely. The zucchini ended up perfectly tender and the tomatoes started to cook down so that they almost became a sauce--which I didn't expect (I suppose I should have but I didn't). Anyway--flavorful, quick, easy, healthy. These are words that describe this one skillet dish that I hope your family likes as much as mine does! :)

When I saw Ambitious Kitchen share these cookies...I had no intention on making them anytime soon. But then How Sweet It Is raved about them. And I realized I had all the ingredients on hand. So I made the best decision ever and decided to give them a try. And they're one of my all-time favorite healthier cookie recipes.

Michael's really becoming a cookie connoisseur, I'm a little proud of it. I like to think I'm responsible. I decided not to tell him there was anything different about these cookies but he immediately was like "Hmm...they're a little nutty. The texture is different too-is there almond butter in these?" And I mean...almond flour...he wasn't too far off. I then came clean and he just shrugged and ate the rest of the cookie happily. Ahh how far we've come.

That reminds me of a funny story-we were voting early for the upcoming primary and I was apparently just out of sorts that day because I kept asking questions and then seeing there were very obvious answers around me. And Michael kept teasing me every time. The people at the election office were getting a kick out of it and the one older woman asked if I was sure about him. I then informed her we were married so I'm fairly stuck with him. She giggled and said well a sense of humor is always good for a long lasting relationship. I agreed. And then glared at my oh so funny husband.

Anyway--back to the cookies. 

They're chewy. Just a little bit nutty (part of why I'm so impressed Michael picked up on it). The coconut sugar gives them a deliciously complex and almost caramelized flavor. Gooey dark chocolate chunks are the things I dream of...and sea salt on top because I firmly feel all ccc's need it. My cookie jar was a happy place when these resided there. And they couldn't be easier to make-you just mix them up in a bowl, you don't even need an electric mixer! And there's no chilling required soo...you can pretty much have cookies in your belly in less than 30 minutes. SCORE!

Best Healthier Dessert Recipes

It's January which means...many of us have New Year's resolutions, right? And most of us probably have vowed to be healthier in some way. SOOO...in an effort to help out-I thought I would share some of the best/my favorite healthier dessert recipes from the blog! Because...life isn't living without dessert, and with these recipes there's NO REASON to give it up!

3 Ingredient Almond Butter Cookies
These cookies are literally just made with almond butter, a little bit of sugar (you can unrefined sugar-such as raw or muscovado sugar), and an egg. So they're gluten-free, dairy-free, low fat, and can be refined-sugar free.

Gooey Peanut Butter Oatmeal Chocolate Chunk Bars
Peanut butter, applesauce, and egg-whites keep these delicious gooey bars low-fat. Oats make them chewy and wholesome. They're also gluten-free and dairy free--although I will warn there's still a decent amount of sugar in these.

Flourless Almond Butter Chocolate Brownies
These are def. my fave healthy brownie recipe! They're chewy and super chocolatey and insanely decadent even though they're gluten-free, low-fat (once again the fat in these comes from healthy almond butter!) and they're only sweetened with honey and just a tiny bit of brown sugar.

Healthy Flourless Nut Butter Cookies
Here's the breakdown--these cookies are sugar-free, gluten-free, dairy-free, and have a crazy short ingredient list. And they're soft. And delicious. And taste like your favorite nut butter. And there's a wonderful bite of dark chocolate (which I guess you could opt out if you want to be really healthy but...antioxidants?) and that lovely contrast from the salt. And...they might be paleo? I'm not terribly informed on the paleo diet but regardless...these are keepers.

{Healthier} Chocolate Peanut Butter Swirl "Cupcakes"
These cupcakes are made with whole wheat flour, Greek yogurt, egg whites, TWO bananas, and  swirl of peanut butter. They also have unsweetened cocoa powder and dark chocolate chips which are perfectly fine. And...and I mean...there's also a little bit of all purpose flour, sugar, and some peanut butter chips. But not much of them! So-they're def. still a low-fat, fairly guilty-free treat.

Pumpkin Pie with Whole Wheat Crust and Cinnamon Caramel Whipped Cream
Skip the whipped cream for an extra healthy version of this pumpkin pie that is made with real pumpkin puree and has a whole wheat pie crust.

Healthy Oatmeal Chocolate Chip Cookies
This is one of my oldest healthy cookie recipes. Small changes make these cookies better for you: whole wheat flour, a smaller amount of butter (with some coconut oil or applesauce to help make them low-fat) and a smaller amount of sugar!

Caramelized Pecan Banana "Ice Cream" with Chocolate Hazelnut Swirl
Admittedly, this recipe is MUCH healthier without the caramelized pecans and the chocolate hazelnut swirl. Considering this banana "ice cream" is literally made with pureed frozen bananas that create an ice-cream like texture. The banana "ice cream" itself is fat-free, gluten-free, vegan/dairy-free.

Dark Chocolate Peanut Butter Pecan Truffles
This is one of my favorite candy recipes-these pecans taste indulgent but are actually healthy! Peanut butter, unsweetened cocoa powder, coconut oil, and honey are all that are needed to create this not-so-sinful, gluten-free, dairy-free, sugar-free, low-fat treat!

Healthier No Bake Cookies
No-bake cookies are a comfort food for me, so I love that this recipe tastes delish while being low-fat, gluten-free, dairy-free, and sugar-free.

Chocolate Chantilly
Silky, sophisticated, irresistible chocolate chantilly (AKA chocolate mousse) that is made with only dark chocolate water, and a bit of sugar. So...yeah--low-fat, gluten-free, and vegan/dairy-free (depending on the chocolate you use).

Healthy Oatmeal Almond Butter Chocolate Chip Cookies
Another tasty cookie that is gluten-free (yay oats!), has just a little bit of brown sugar (seriously...2 tbsp.-it's nothin!), and dairy-free, with peanut butter and egg-whites keep it tasty and low-fat!

Healthy Deep Dish Chocolate Chip Cookies 
This has been one of the biggest healthy dessert game-changers for me. It literally tastes like a chewy and perfect chocolate chip cookie even though there's a healthy secret ingredient: CHICKPEAS! They're low in sugar, gluten-free, low-fat, and dairy-free/vegan and they blog my friggin mind.

Chocolate Chewies
These cookies aren't meant to be healthy but, since they're meringues, they're naturally gluten-free, dairy-free, and low-fat (they do have a good amount of sugar in them, though).

Peanut Butter Oat Balls
These are a super tasty treat/snack that are also filling (thanks to oats and flaxseed meal) and, of course, they're gluten-free, dairy-free, low-fat, and even sugar-free (aside from chocolate chips).

Peanut Butter Pretzel Truffles
Finally, these truffles could not be easier, more yummalicious, or simpler in terms of ingredients: they're just made with peanut butter, pretzels, and chocolate! Making them low-fat, low in sugar, and just all around awesome!

One Pot Mexican Rice Casserole

Yepp. Another one-pot recipe. I'm serious about not doing dishes and feeding my hubby (seriously...if I don't feed him he gets all whiny and it's no fun. Ask anyone with an Italian husband lol.) Anyway, one of the beautiful things about this Mexican Rice Casserole recipe is you can definitely customize it based on your preferences! You can add in onions, peppers, corn, or any other veggies you fancy! You can also add in some cooked meat (so me making chicken and adding it sort of increased the dishes I needed to wash post this recipe but...that's ok! Plus you could just buy pre-prepared chicken or sausage or whatever and throw it in there to maintain the one-pot'dness.) And, although it's pretty healthy to begin with, you can make this dish even better for you by using brown rice (which I did!)

Regardless of any customization you decide to do, the base of the recipe is this: rice, veggies, spices, tomatoes, and cheeeese! It makes an awesome side dish or entree and is full of flavors! It's also colorful...which is pretty important for Michael and his food. He likes for food to be about more than just taste, he gets really into the textures and colors too. It's pretty hilarious, except when he's griping about how I make too many brown "bland" foods---but that's why I make recipes like this one! To keep me sane and make him happy! And so I can share the happiness and sanity-savingness with all of you. This "casserole" is a perfect weeknight meal and I hope you enjoy it as much as we did!

Soup season is here, everyone! And I had yet to make a chicken noodle soup recipe that I liked (a couple ill-fated attempts in the past resulted in ridiculously bland, giant batches of soup). Sure I had a chicken and potato chowder that I was (and still am) obsessed with, but we all need a simple chicken noodle soup recipe in our repertoire, no?

Yes! And this turned out to be the perfect one. Michael and I both prefer heartier soups, so the fact that this is a creamy chicken noodle soup helps add to it. And if you're concerned about your waistline-don't be! The creaminess comes from fat-free evaporated milk, so you can have your soup and eat it too! It's comforting and classic and I know we're all going to be happy to have this when someone inevitably comes down with a cold* (or at least if we come home after a chilly day and need something to warm us up the way only soup can!) And it's actually pretty quick to make! Soup for everyone!

*Fingers crossed nobody gets a cold...ever.

Guys...I am so excited to help ring in #Oatober with this recipe! Oh, what is Oatober, you ask? It's October....but Peanut Butter & Co. and Bob's Red Mill have teamed up to make this month all about hearty, versatile oats + delicious and flavorful peanut butter! And I'm so stoked because these are two of my favorite brands-I legit. use them all the time!

Now....there are a bjillion ways you can pair oats and peanut butter (oatmeal, cookies, fruit crisp desserts, etc.) but one of my favorites in GRANOLA. I just love granola. It's such a tasty and easy breakfast or snack and it can even be used in other things (granola waffles? granola cookies? etc.) So...I decided that was the perfect thing to share with you guys today!

Something really cool and unique about this recipe is the whole wheat flour-it creates little clumps and is part of what adds to the "cookie" sort of feeling this granola has. Oh and be prepared-it will 100% smell like you're baking delicious cookies when it's in the oven. But that's ok because, even though this granola is healthy and wholesome and filling, it's also insanely delicious. Dark Chocolate Dreams is my pb bestie-chocolatey and peanut buttery goodness. Then we have crunchy peanuts and subtly sweet honey and the chewiness that you get courtesy of oats. Perfection. Guiltless indulgence!

Black Bean Pico de Gallo

I miss Mexico.

You know-we went there for our honeymoon and it was the best time ever. Well, it also had the tastiest food ever. I've never been huge on Mexican food but that somewhat changed thanks to our trip-especially when it comes to salsas and dips and such, we had those with/prior to pretty much every meal and they were SO GOOD! My particular favorite was a black bean pico de gallo we had at the Cactus Club. So one day I decided...I'm going to make my own! And it was a fantastic idea.

Anyway, my missing of Mexico has only be exacerbated by the fact that we've been to a couple Mexican restaurants (people are very excited that I'll now go to them) and my cousins had been making pico de gallo/salsas a lot lately during our Sundays in the summer. Then, one day, Michael asked me to buy him salsa con queso and tortilla chips and I said to myself, "Kayle-this is the time. Let's recreate your favorite pico de gallo!"

First a couple tips: This is totally adaptable based upon your palate. Know that. Also--use smaller (cherry or roma) tomatoes so that your pico de gallo doesn't turn out as watery as mine. Trust me on this. Also, um....make sure your jalapeños are chopped very small, your onions are pretty darn small, and that the tomatoes are diced on the smaller side too. And, finally--DO NOT SKIMP ON THE SALT. I'm normally very wary about the salt shaker for health reasons (and it's also kind of like I'm a recovering salt addict...I used to just straight up eat salt y'all and the sad part is...I'm not grossed out by it because I know that's delicious stuff. But soooo bad for you!)-but salt is really your friend with this, it's going to make the biggest difference with the flavor and just...you need it. You will thank me for this. Promise.

And c'mon people...this is a bowl full of vegetables and beans-it's still healthy!

Now you're probably wondering, "Was it everything you wanted it to be? Was it delicious? Did you love it?" 

....

YES YES YES!!! This came out as good as I could have ever expected! Mind you, it would have been nicer if I was staring at the beach and if Michael and I were in relax-y vacation mode but...still...for non-honeymoon fare, it was pretty darn good. Fresh and sweet and and cilantro-y (although that is another thing you can totally mess with to get it to your liking) and delicious (mine wasn't spicy at all because I don't like spicy so I used the lower amount of jalapeño--if you like spiciness feel free to up the amount and/or use the seeds!) And it was demolished pretty much in one sitting with Michael, me, and my brother all circled around it in my living room like crazy savages.

Yepp. That good. You're gonna love it!

Hurray! I did it! I made a healthy-like really...actually healthy-thing and Michael liked it and complimented it and had no comments like "yeah it's ok but it would be better if it were sweeter..." etc. These muffins are that healthy thing.

Now-if you're into the paleo thing or if you're gluten-free or dairy free, good news! You can totally eat these muffins! And if you're not paleo or dairy free? Feel free to use peanut butter and cow milk in this recipe (which I, in fact, did). I was super excited about the gluten-free aspect because I was able to use some of the coconut flour that I've had just sitting in my refrigerator, and these muffins were by far the best recipe I've made using it! Anyway, regardless of dietary needs--these are just taaasty tasty muffins! The texture is really nice and they have a perfect amount of chocolate flavor. They taste like a delicious and healthy treat that make an amazing breakfast or snack! (And if you're really being good-you can even make these your dessert.)

Michael even let one of his co-workers try a muffin and she raved about them. She loved that they're not too sweet but they don't taste like health food either. They're just...good! 

Which is good becaaaaause....I've got a wedding dress to wear in 10 days!

As I've mentioned before-Michael is a big fan of variety. And he has a big appetite. So I often struggle with making enough food and enough different kinds of food to keep him satisfied. Which is why I was SO thrilled when I came up with this super simple dinner idea and he loved it!

One of the best parts of this recipe is-in addition to the fact that you cook an entire dinner together in the oven-that you can completely customize the flavorings based upon preferences. I went a slightly spicy route using chili powder and paprika, but you could also do soy sauce and ginger, or garlic and herbs, etc. Also, you can switch out the veggies according to preference-I used broccoli but you could use whatever, or a combo of different vegetables. (Heck, you can even use chicken instead of fish!) And in the end you have flavorful rice, veggies, and fish all cooked up together. It's perfect. My solution to weeknight dinners for my hungry hungry hippo of a fiance' and I know it'll be a great option for your family too!

I know, it's like waffles are becoming the new cookies or chicken or potatoes around here: how many different versions of one thing can I make?? I apologize buuut....I love  waffles. They're tasty and can be a great quick and healthy breakfast option--I love freezing leftovers and toasting them later. Like homemade Eggos :P And my new waffle maker is awesome. So using it is exciting. I hope you can all get on board with these because you're gonna LOVE this recipe!

I had some leftover chocolate chip granola hanging around and decided I wanted to make waffles with that. And I loved the last waffles I made so much I wanted to use that recipe as the base-but altered to be a bit healthier. Annnnd HOORAY-it worked!

These waffles taste hearty and chewy with just a hint of crunch and mmmm...they're just a great day to begin your day! Whether you top them with fruit, butter and syrup, or peanut butter.

I know that I've been eating them for breakfast every day for a week and I have 0 complaints :D
