Another baby/toddler approved recipe--that's also endorsed by the hubby. This oatmeal is awesome because it is super versatile, you can totally play around with it a bunch, and it's healthy AND tasty! And-bonus for a busy parent or any busy adult-suuuper quick and easy to make. You just mix everything together, spread into a pan, and bake!
But I swear as soon as I figure out how to successfully hide an apple from his little eagle toddler eyes I will be making this again!
Apple Cinnamon Baked Oatmeal
Adapted from Five Heart Home
Makes 6 servings.
Ingredients:
- 2 cups rolled oats
- 2 tsp. ground cinnamon
- 1/4 tsp. ground ginger
- 1/4 tsp. salt (can omit if concerned about sodium for babies)
- 1 cup diced apples (about 1 medium apple)-with or without the skin
- 1/2 cup applesauce (unsweetened or sweetened are both fine)
- 1/2 cup milk OR nondairy milk of choice, room temperature
- 2 eggs, room temperature
- Optional-1/4 cup maple syrup
- 1 tsp. pure vanilla extract
- 1/4 cup coconut oil, melted and slightly cooled (can substitute for any preferred oil)
Preparation:
- Preheat oven to 350F degrees and grease an 8"x8" glass baking dish.
- In a large bowl combine oats, cinnamon, ginger, and salt.
- Stir in diced apples, applesauce, milk, eggs, maple syrup, and vanilla.
- Mix in coconut oil until combined.
- Spread into prepared baking dish and bake 30 minutes, until set and golden on top. Cool for t least 5 minutes before serving. Store leftovers in an airtight container in the refrigerator for up to 5 days. Serve warm or cold and garnish if desired!
