3 Ingredient Peanut Butter Banana Oatmeal Cookies {Baby Led Weaning Recipes}

James is 9 months old which means we've been on our baby led weaning journey for about 2 and a half months. I'm not going to try to sell you on it or be terribly informative I'll just sum it up by saying: when babies are at least 6 months old and able to sit up unassisted you offer them table foods, usually whatever you're having-just cut appropriately(aside from choking hazards, like nuts, or things babies can't have, like honey)-instead of doing purees. There's a bunch to it and I highly suggest you look into it if you're interested, I've loved it. Anyway, thanks to BLW James is an awesome eater and I get to have tons of fun making him lots of different foods. But I also want him to be healthy, so he hasn't had any real desserts yet. His kind of desserts are like nice cream (AKA blended frozen bananas that have the texture of ice cream) and these cookies. Which I'm good with. And, frankly, they ARE tasty. So he's not missing out!

I mean, clearly he couldn't keep his hands off them:
3 ingredients: oats, peanut butter, and bananas. That's it. It's pretty epic. And not just for babies! I would have called them "breakfast cookies" prior to mommy-dom and been perfectly happy eating them then, too. This recipe is super duper insanely easy to whip up and it's also very customizable-you can add in all sorts of mix ins and sub out different nut butters if peanut isn't your thang. You can even add some maple syrup or honey if you feel like they're not sweet enough. Let's be honest, if these had just been made for me they would have had chocolate chips. But James is not ready for chocolate, he'll love it too much. Gotta keep some surprises for him. So for now he'll happily munch away on his special little baby cookies because they're tasty and I'll be happy that they're healthy! Win win win win!

Vegan Strawberry Ice Cream

Vegan Strawberry Ice Cream
Yepp, my spoiled husband got me to make him more ice cream. And, once again, it's dairy free (and, incidentally, vegan) so that he can eat more of it without worrying about his tummy. AND for all of you peoples with the New Year's resolutions--this is probably right up your alley!
Vegan Strawberry Ice Cream
This recipe made me extra happy because it's like healthy ice cream (actually, to be exact, it's sort of like a cross between an ice cream and a sorbet, texture-wise. Not quite as creamy as ice cream, but not quite as icy as sorbet.) It's legit just like strawberries, a liquid sweetener (such as agave nectar, honey, maple syrup, etc.), coconut cream, and non-dairy milk. It's pretty awesome. And Michael looooved it.
Vegan Strawberry Ice Cream
I will admit, part of what Michael loved is that I topped the ice cream with homemade magic shell...so it was like a chocolate covered strawberry situation. Still, though. Healthy. He's happy. I'm happy. The only reason we're not happy right now is we finally ran out of it (and this recipe makes a good amount, so it took us awhile) and now he's all ice cream-less and I'm stuck with debating if I'm going to make him more or buy him some or make him just live without ice cream because gosh there's a baby coming and I've got bigger fish to fry than ice cream!

But...I mean...I'll probably just make some more of this because it's awesome. (AND unlike some other dairy-free/vegan ice creams it actually scoops pretty easily straight out of the freezer! WOO!)

Vegan Peanut Butter Ice Cream

Vegan Peanut Butter Ice Cream

A simple recipe for vegan peanut butter ice cream, using only 4 easily found ingredients, that is creamy and delicious!

Vegan Peanut Butter Ice Cream
So...Michael isn't technically lactose intolerant. But he's definitely having a harder time with large amounts of dairy the older he's getting. So we've been cutting back a bit and subbing in with cashew milk. But he's a bit of an ice cream fanatic. So I decided it was high time I tried to make some dairy free ice cream for him and when I went looking for a simple recipe (with no weird, random, ingredients that a non-vegan person wouldn't normally have) this one jumped out at me! It's got only FOUR ingredients and is nice and straightforward.
Vegan Peanut Butter Ice Cream
Michael also likes chocolate chips or chunks in his ice creams so I added that as an optional mix-in as well! Either way, the ice cream is creamy and flavorful (so peanut buttery) and Michael and I both loved it! I will say, you should leave the ice cream out for a bit after having it in the freezer before serving because it gets REALLY hard in the freezer. Like...unscoopable. But if we can't have patience for ice cream, what can we have patience for?

{Vegan & Gluten-free} Almond Butter Chocolate Chip Cookies

{Vegan & Gluten-free} Almond Butter Chocolate Chip Cookies
These cookies are pretty miraculous. They're really delicious, and chewy, and awesome. They also happen to be gluten-free and (if you use vegan chocolate chips) vegan.

WHAAAAA??!

I know. Like I said-miraculous.
{Vegan & Gluten-free} Almond Butter Chocolate Chip Cookies
BTW--HOW adorable is that little glass bottle thing in the background?? Michael's mom has a few of those on display in her dining room and I've been eyeing them for awhile. Since she's moving, she's trying to get rid of a lot of stuff, so she happily gave me one! (She offered to give me a bunch more stuff but...I don't have the space lol) I knew they'd be perfect to include in a cookie shoot and i was right!
{Vegan & Gluten-free} Almond Butter Chocolate Chip Cookies
Honestly, these cookies just taste like a delicious almond butter (or peanut butter) oatmeal chocolate chip cookie. I would never have guessed that they're vegan and gluten-free. They're really really delicious. And, I felt like they were healthy enough to eat for breakfast....

But you know. You do you.

Homemade Mexican Guacamole

Homemade Mexican Guacamole
Lately...I've been craving guacamole. And I haven't been able to get it (I keep meaning to go to this one Mexican restaurant we love but it hasn't happened yet) so...I finally just decided to make my own. Because that's what we food bloggers do. Or...at least...that's usually what I do. And really...there's no reason that all of us shouldn't make our own guacamole! IT IS SO EASY! And insaaanely quick to make!

Funny fact--apparently my dad and grandma (heck..probably all of my grandparents) have never tried guacamole. And one time (a time my brother and I still enjoy a good giggle over) my mom pronounced guac "GWYE-ACK" (admittedly on accident--she does know how to correctly pronounce it). So...I don't come from a particularly adventurous food background. But somehow...I love guacamole. And I am so happy that I do.
Homemade Mexican Guacamole
First a little tip on avocado ripeness--you're going to want the avocado skin to be very dark and have give when you squeeze it. If it's suuuper soft when you squeeze it-it may be over-ripe, but you can still cut it open and use any parts that are still green and not brown! Another tip for good guac is DO NOT BE AFRAID OF SALT! Seriously...you're gonna want to be generous. And also, this recipe is definitely one of those taste and adjust sort of situations--some of the ingredients aren't going to have amounts because you should sort of just add however much tastes good to you, you know? I know the first time you make something that is super frustrating but I promise after you make it once and figure it out...it just makes sense!

Oh and after you've made the guacamole, if you don't finish it and want some leftovers and are concerned about it turning brown here's another little tip: spray the top of the guacamole with cooking spray and cover the top with plastic wrap (so that the wrap is pressing on all of the guacamole)--it helps!
Homemade Mexican Guacamole
Avocadoes are potentially the only thing that I like and Michael doesn't, so I had to eat all the guacamole myself. Which...even though it didn't look like much...it actually was. So this might be best to serve if you're entertaining or have at least a couple people to eat it--because I had a difficult time finishing it by myself.

Also--don't limit yourself to eating this deliciousness with just chips! Quesadillas, flautas, and even french fries are so good dipped in the guac and it's also tasty on sandwiches!

Guacamole is too good to only enjoy one way.

So Delicious Dairy Free® Frozen Chocolate Salted Caramel Pie {Vegan, No-Bake}

This shop has been compensated by Collective Bias, Inc. and its advertiser. All opinions are mine alone. #DairyFree4All #CollectiveBias
So Delicious Dairy Free® Frozen Chocolate Salted Caramel Pie {Vegan, No-Bake}
I'm not dairy-free but that hasn't stopped me from lusting after So Delicious Dairy Free® frozen treats. I've long seen them and made a note to myself, "Hey...those look yummalicious. You should get them sometime." So when I had the opportunity to create a dairy-free recipe using So Delicious, I RAN to the frozen section of my closest Walmart! I was faced with a dizzying array of amazing options...but my heart was stolen when I laid eyes on their Cashew Salted Caramel Cluster and Cashew Dark Chocolate Truffle. Sweet and salty cashew milk based frozen dessert with chocolate covered cashews and ribbons of salted caramel? HEAVEN. Fair trade cocoa (also cashew milk based) frozen goodness folded with fudge and shaved chocolate? OMIGOSH YES.
So Delicious Dairy Free® Frozen Chocolate Salted Caramel Pie {Vegan, No-Bake}
So Delicious Dairy Free® Frozen Chocolate Salted Caramel Pie {Vegan, No-Bake}
Now...before I could create a recipe...I had to at least give each of the frozen desserts a try. And I can 100% confidently attest that they were RICH, DECADENT, CREAMY, and seriously insanely delicious. I think I'm a complete convert--I've gone So Delicious Dairy Free® and I don't think I can go back! It's seriously so unbelievable that they are:
  • Certified Vegan
  • Dairy-Free and Egg-Free
  • Non-GMO Project Verified
  • Cholesterol-free
  • No artificial colors, flavors, trans-fats, hydrogenated oils, or preservatives
  • No high-fructose corn syrup
  • Always 100% plant-based
  • Certified Kosher
Like....WHAAAT? Not to mention the fact that many of their products are also made with organic ingredients. Be still my good-food-lovin' heart: no wonder So Delicious Dairy Free® has been a dairy-free staple for more than 25 years! Seriously...their products are outstandingly delicious and something you can feel good about eating (or drinking...or licking..)
So Delicious Dairy Free® Frozen Chocolate Salted Caramel Pie {Vegan, No-Bake}
I decided the perfect way to highlight the 2 delectable pints of So Delicious Dairy Free® goodness that I picked up was in the form of a vegan (and, obviously, dairy-free) frozen pie! The base is a perfect, no-bake, chocolate cookie crust. Then there's a layer of the Cashew Salted Caramel Cluster, topped with a layer of Cashew Dark Chocolate Truffle. And the finishing touch? You cover the entire pie with vegan salted caramel sauce (which you are more than welcome to buy, but I have included a recipe below!) This pie is the perfect melding of flavors, everything balances so nicely and it all tastes deliiiicious together! The alternating layers of chocolate and caramel. The crunchy crust, creamy frozen filling, and gooey caramel. The perfect marriage of salty and sweet. A dessert that can be enjoyed by practically everyone-vegan or not!  Guys...this is a good one, you're going to LUHVE it. The name does not lie....it really is: SO DELICIOUS!

Healthy Deep Dish Chocolate Chip Cookies {Gluten-free, Vegan}

Healthy Deep Dish Chocolate Chip Cookies {Gluten-free, Vegan}
I wanted to believe in the whole "chickpeas can totally taste like chocolate chip cookies" thing. I did.

But there was a part of me that just...couldn't really trust it.

Until I made these. And now I am a TRUE believer! BECAUSE OMG YOU GUYS IT'S TRUE! IT'S REALLY REALLY TRUE! Not like when people say cauliflour can taste like potatoes (it does not) or that green beans can taste like french fries (NEVER!)--no....hear me when I tell you that these cookies that have no flour, no butter, no eggs, and a whole can of chickpeas....they taste like ooey, gooey, decadent, CHOCOLATE CHIP COOKIES!

My life begins today.
Healthy Deep Dish Chocolate Chip Cookies {Gluten-free, Vegan}
First of all, a logistical note: you can double this recipe and make it in a pie dish (the baking time would just be a bit longer). However, I love single serving little deep dish cookies in ramekins. So that's what I decided to do. And these are probably the easiest cookies ever. You just throw the ingredients into a food processor and process everything together. Sort of like cookie dough hummus :P And you mix in chocolate chips (because we need those...for life.) and bake these little treats up! And they just taste like a warm, soft, gooey deep dish chocolate chip cookie. No one will ever guess that they're healthy!

Our little secret ;)

{Healthy} Peanut Butter Chocolate Chip Oat Bars- #ChocPBDay

{Healthy} Peanut Butter Chocolate Chip Oat Bars- #ChocPBDay
Welcome to the 2nd annual Chocolate Peanut Butter Day!!!

A group of bloggers (hosted by the amazing and talented Carla of Chocolate Moosey and Miriam of Overtime Cook) have declared March 25th the official day to celebrate the ultimate of flavor pairings: chocolate and peanut butter! We had so much fun last year that of course I was excited to celebrate again this year!
{Healthy} Peanut Butter Chocolate Chip Oat Bars
Chocolate and peanut butter are my absolute favorite. My favorite candies growing up all had that beautiful pairing and SO MANY of the desserts I've made are choc/pb-fied (last year I even did a round up of 35 chocolate and peanut butter recipes on the blog...and goodness knows I've made many many more over the course of the year!) I've even been known to melt together some chocolate and peanut butter for a quick and richly delicious treat when I have no other sweets around. That is the depth of my love. (In a perfect world I'd have chocolate cake with peanut butter filling for my wedding cake but...alas...I'm playing it safe in case there are allergies.)
{Healthy} Peanut Butter Chocolate Chip Oat Bars
As you can tell if you've visited this little blog-ette of mine in 2015--I'm on a bit of a "healthier" kick. Partly just because I want to get back to a better place physically and partly because my wedding is quickly approaching! So these bars that I decided to make are on the healthier side. But you know what's funny? Almost every healthy dessert I make involves chocolate and peanut butter. Why? Peanut butter is delicious BUT also full of protein and good stuff and oftentimes makes an excellent substitute for butter. And chocolate is an antioxidant and...well...I need it. So I throw it in nearly everything to keep me sane. The point is-it was definitely not difficult to find something to make for Chocolate Peanut Butter Day!
{Healthy} Peanut Butter Chocolate Chip Oat Bars
Here is the beauty of healthy treats: they can be dessert, a snack, or breakfast! So these chewy, hearty, delicious bars (which have just the right amount of sweetness) may be consumed thrice a day. In fact...I think I'd recommend it. Good for the soul and all that.

Multi-Nut Butter

Multi-Nut Butter
I've been sitting on the idea of making a nut butter with a variety of nuts for awhile. And then I recently realized that I actually have 4 varieties of nuts, right now, in my kitchen. So it was nut butter time!
Multi-Nut Butter
As I've mentioned quite a few times before--making homemade nut butters is unbelievably easy and so entirely customizable. You can add pretty much anything you want to it--honey, chocolate, vanilla, etc. Or you could add nothing and just let it be an ultra healthy nut butter! This is the same. I've given you the amounts of nuts and the varieties that I used but you can completely mix it up to suit your own needs! And your end result is a delicious, healthy, natural (and no-stir!) nut butter!
Multi-Nut Butter
For my multi-nut butter I had almonds and peanuts as the predominant nuts (peanuts have a good amount of oil so that way I wouldn't need to add oil during the process. And almonds are ultra good for you!) and then walnuts (which I don't love but are some of the healthier nuts) and pecans (which taste oh so good but are prob. the least healthy nuts). And then I just added a smidgen bit of salt and honey. And now I have a delicious, creamy (of all the nut butters I've made this one doesn't get as thick and hard in the refrigerator-which I looove) thing to spread on my pancakes, toast, or to bake with!

Get on board and get your food processor ready!

Vegan Cuts Snack Box Review

Hello.

I know. I'm not vegan. Like...at all.

BUT--I like vegan things sometimes. And I like that, usually, vegan goodies tend to be unprocessed and from scratch which I am all about. And I know some of you peoples are vegans!

SO-I have some exciting stuff to share.

Which doesn't mean much aside from the fact that I think Vegan Cuts is an amazing website and that their new Snack Boxes are the bees knees and I want to share all about it! (plus I want to get my hands on their gorgeous Beauty Boxes!)

Here's the lowdown on Vegan Cuts Snack Boxes--for a monthly fee of $19.95 (with FREE SHIPPING for the US!) you get between 7 and 10 snacks, a mix of full and sample sizes, that are all vegan, delicious, and most of them are even gluten-free, too! What What whaaaaaat!
In my shipment I received a super-cool Chai flavored nutritional shake, crunchy and delicious coconut chips, a slightly sweet and very coconut-y coconut treat, annnnd...
THESE CHIPS. Michael FLIPPED OUT over these chips. Like...could not stop talking about how much he loves them and how I need to buy him more. And Michael tends to not be a fan of things that are vegan/gluten-free so him saying this...he reaaaaally loved them! And that's not all I got in my box!
Sweets for Kayle!! There were candies, classic and comforting snack cookies (seriously...just like the little baggies you grew up with but made of real ingredients!), a savory spice/seasoning packet, and....the yummiest candy bar in all the land. Everything tastes delicious but you can tell that they're made from real, natural, good stuff!
This "hot & fit cereal" is another perfect addition for Michael's snack/breakfast time routine. I love the wholesome goodness that's in this oatmeal.

Almond Peanut Butter

Almond Peanut Butter
I'm like a walking advertisement for making homemade nut butters. I always tell people about it and they look at me like I'm crazy (or they'll even ask "...isn't there butter in peanut butter?"....*sigh*). But seriously, I cannot emphasize this enough:

MAKING HOMEMADE NUT BUTTERS IS REALLY REALLY RIDICULOUSLY EASY.
LIKE...I MEAN IT.
Almond Peanut Butter
Allow me to break down the entire process:
Throw nuts in food processor (or powerful blender).
Process.

...that's it.

The only time it might get a smidge more complicated than that (which is still insanely easy) is if 1. You decide to add in other stuff like chocolate, honey, salt, etc. Which involves--throwing those things in with the nuts. Again...that's it. OR 2. If you're using a drier nut (such as almonds) you may need to pour in a little oil (olive oil, peanut oil, canola, coconut, etc.) That's all. I'm not kidding when I say ANYONE can make this.
Almond Peanut Butter
Now, although this nut butter has almonds in it-it is paired with the very oily peanuts which means this is a super duper easy one. I just put the nuts in there, let them go, then I had tasty tassssty almond peanut butter!

Enough about how easy it is to MAKE this almond peanut butter, let's talk about how easy it is to LOOOVE to eat it! Before I moved to NYC I had never had a nut butter other than peanut butter-heck, I didn't even know they existed! One day someone mentioned how almond butter was healthier and I tried it and was like "Eh it's good but not as good as my good 'ole pb!"

As I've already mentioned, almond butter did grow on me. However, it could never replace peanut butter in my heart. But now...I DON'T HAVE TO CHOOSE! I get all the best flavors of almond and peanut butters in one place, and the health benefits of the almonds get in there too.

Really....I can't think of a better thing to spread on my toast. Or waffles (speaking of which, keep an eye out for a particularly special waffle recipe next week!). Oooh or maybe bake in cookies??

Endless possibilities. :)

Avocado Brownies with @ZulkaSugar

Avocado Brownies
Alright guys! Today is the last day of my little unofficial Zulka Pure Cane Sugar week! If you wanna read more about it, check out Monday's post. Essentially, I've just been posting healthier sweets made with the pure, unprocessed deliciousness of morena sugar.
Avocado Brownies
So, I'm always semi-suspicious when I see a recipe for like brownies or some such with something weird and healthy in place of, say, butter. But when I saw the photos from the post featuring these avocado brownies, and read the author's passion over how delicious they were I figured-why not?

Um, well, they weren't bad.

They were um...kind of gummy in texture? And you were aware of something different in the flavor.
This doesn't mean that you won't necessarily like them-you may. I didn't mind them, they were kinda just like "eh" to me. I tried to pawn some off on one of the kids I babysit, but her family were not big fans (so then I had to redeem myself by bringing them these cookies the next week. They were much happier.)

The moral of the story is-avocado is not a miraculous replacement for butter or oil. But it's something to try.

Guacamole

Guacamole
Hi there! *waves*

Hows your 2013 going so far?

You feeling good about your resolutions and what not?

You want a nice, easy, healthy recipe?

You do?

Great!
Guacamole
Guacamole.

Avocado is full of all kinds of healthy good fats and what not (don't shy away from the word fat, you need it!). In general, I don't particularly care for avocado in things, but I DO like guacamole. And this is the most fresh tasting guacamole you'll probably ever have! And it's fairly easy to customize according to your own tastes. Think it needs a little more garlic? Throw some in there! Do you prefer the pure, clean taste of avocado? Leave some of these ingredients out! No big! It's your life, eat your guacamole how you like!

And then be all proud of yourself, like, "Yes...I make my own guacamole. And I HAVE lost weight, thank you for asking!"

(Yes, this is the guacamole I made for Michael's birthday-so you finally have all those recipes! Yay!)

Homemade Peanut Butter

Homemade Peanut Butter

Tomorrow is National Peanut Day.

We should celebrate.

With peanut butter.
HOMEMADE Peanut Butter.

Got 5 minutes? Got peanuts? Got a food processor?
Yes?
Then you can make peanut butter, my friend.

Seriously, this recipe isn't even a recipe. It's like a...hey...take some peanuts...or other nuts...toss em in a food processor. Want salt? Throw some in there.  Process. Wait. Watch it turn into a ball. Does it break down and get smooth? Good. No? Put a little bit of oil in there, whatever sort you prefer.Wanna flavor it? Throw whatever the crap you want in there. Want it crunchy? Put some peanuts in there towards the end so there are some little chopped peanut bits in there. Done. End of story. You have amazing homemade peanut butter. It's homemade, unprocessed, all natural, AND (in my case anyway) has no oil separation.

Oh yeah, and it's the best peanut butter you'll ever taste.*

I'm obsessed. I am (probably) never buying peanut butter again.

(unless you're stupid like Michael, in which case you'll say "It tastes too much like peanuts." That boy will not be deterred from his processed junk. *sigh*

Chocolate Chantilly

Chocolate Chantilly

While the weather is still warm, I'll share a delicious, refreshing (yet decadent and rich) no bake dessert for you. And it takes like...no time at all. And very little effort. But seems super fancy and like you went to culinary school and stuffff.

This recipe is revolutionary. It takes 3 ingredients. No baking. Just ice water. The result is a beautiful, velvet-y textured chocolate mousse that melts in your mouth. I don't even know what else to say about it. And to be frank, I'm a busy bee right now! So I shall not delay any longer, to the recipe!:

(HEALTHY) Chocolate Chip Cookie Pancakes

(HEALTHY) Chocolate Chip Cookie Pancakes
Sometimes I make pancakes.
Not often.
I'm concerned they're not super healthy for breakfast.
I've never shared any recipes with you because....
my pancakes always turn out ugly.
Apparently I am unable to cook pancakes and have them look pretty.
Or at least-I was!

Michael's Applesauce-Holiday Recipe Exchange: Week Six (Fall Spices).

Slow Cooker Applesauce

Why did I ever buy applesauce? It's so easy to make and so freaking much yummier!!!!! When Michael and his mom (my "Mama Maria") started speaking about some sort of cryptic special applesauce recipe that Michael did when he was little-I had to see it. So, my precious Mama Maria scanned it and emailed it to me. CUTEST THING EVER! So cute, I'm sharing pictures of it with you--it has the recipe for the applesauce on it! However, since it was written by a 6 year old, it leaves some little details out, so you can also scroll down and see the more in depth directions written by me right under it. Also, it's Holiday Recipe Exchange time again! (View Holiday Recipe Exchange posts for Week 1-Parts 1 and 2 and Week 3) This week is fall spices-and this applesauce has a very obvious and perfect cinnamon component. Seriously make this-it's amazing freshly made and hot, and also great leftover and cold. It tastes much more like actual...apples...than any other applesauce I've ever had! And, it's in no way difficult to make, and requires very few ingredients (and you almost definitely already have all of them). Go forth and make applesauce! (And go "awww" at the cuteness of my boyfriend when he was little). :D

I love it when you try & want to share recipes you found here! Please just rewrite in your own words, use your own photos, & always link back to me! Thanks!
