Sooo, I'm not super in love with breakfast food--I know I know! Don't worry, I always eat breakfast, but it's always like peanut butter toast, fruit, green monster smoothie, etc.-just because I know it's good for me. The only other like big breakfast foods I like....well...they taste like dessert. Cinnamon Rolls. Muffins. Pancakes and waffles--BUT--only if they have chocolate chips and I spread peanut butter over them. I wasn't always this way, I used to kind of like the classic butter and syrup combo. But now that I can have a breakfast with one of my flavor combinations, it's done for. Anyway, one day I wanted waffles! And I wanted to use what I had! But I didn't want them to be boring! So, after poring over the internet and thinking a bit, I sort of Frankenstein-ed this recipe together. They're healthier (I have to make up for my pb chocolate weakness) and light yet substantial (as a result of the whipped egg whites + oats). They're delishums!
Oat Waffles (+ Chocolate Chips)
Adapted from Annie's Eats "Chocolate Chip Waffles" and All Recipes "Oat Waffles"
Ingredients:
- 1 cup all-purpose flour
- 1 cup oat flour (you can make this by putting oats in your food processor)
- 4 tsp. baking powder
- 1/2 tsp. salt
- 2 eggs
- 1 3/4 cups milk
- 2 tbsp. vegetable oil
- 1 tsp. vanilla (vanilla extract)
- 1 tbsp. granulated sugar
- Optional: Chocolate chips, to taste.
Preparation:
- Whisk together flours, baking powder, and salt.
- Separate the 2 egg yolks from the 2 whites.
- Whisk the yolks, milk, oil, and vanilla together.
- Whisk the liquid ingredients into the dry until a batter forms-don't over mix.
- Whip the egg whites until they begin to hold a loose peak. Scatter the sugar over them and then continue whipping until they form soft peaks.
- Fold 1/3 of the whites into the batter, then fold in the rest. (Optional: fold in chocolate chips)
- Cook in a waffle iron. Once they're cooked, to keep them warm you can keep them in a 200 degree oven.
Michael's waffle is pretty-you can see the oats in there. Also, don't mock my plates. They were free. I'll get good ones when we get married :P
