Something Saturdays (3/30/13)

I love this post about sharing on facebook (and when it's not so much "sharing" as stealing).

I also have always (Ok not always, pre-teen Kayle would disagree) loved JT as a comedian better than a singer, and I am now obsessed with his and Jimmy Fallon's History of Rap!

Speaking of videos of songs...I was curious about the song I'd been hearing on "The Host" trailer, so I looked it up and watched the music video...I still like the song but AH IT'S SUCH A TRIPPY VIDEO! Watch it and be sort of terrified.

Michael and I just watched the first 2 seasons of Game of Thrones...and then we watched these two youtube/college humor videos: Game of Thrones RPG and Game of Thrones Season 2 RPG. Hilarious. If you're a fan you need to watch them!

Happy Belated Passover and Almost Easter all! What are you guys making/did you make? Tomorrow I'm making 2 roast turkey breasts, some salad, Baked Cheddar and Scallion Mashed Potatoes, Bacon wrapped water chestnuts (for Michael), and Roxana's Best Dinner Rolls!

I'm having a very strange phase lately, you guys...
to put it simply...
I've been eating spinach.

I KNOW! It's like...I don't even know who I am anymore! 15 year old Kayle (let's face it...birth through age 19 year old Kayle's) is staring at me, wide mouthed with horror. Here is how that conversation might go:

15 y/o Kayle: OMG WHAT ARE YOU LIKE DOING? EATING SPINACH!? EWWW SO GROSS! 

Me: Calm down...seriously...just...calm down. Not just right now. Overall. You need to chill out. Trust me. But also...it's really not gross. You haven't even tried spinach.

15 y/o K: IT'S GROSS AND BITTER AND MUSHY AND COMES IN A CAN AND POPEYE EATS IT! THAT'S ALL I NEED TO KNOW!

Me: Oh my heavens was I seriously this loud and excitable?  *grabs 15 year old self and shakes* YOU CANNOT TAKE LIFE LESSONS FROM CARTOONS! Also, spinach can be eaten other ways.

15 K: I had a leaf of it raw once...it tasted like a leaf. WHO WANTS TO EAT LEAVES!?

Me: FOR PETE'S SAKE CALM DOWN! Ok, you're not 100% wrong there. Just...trust me kid...something about combining spinach with other stuff-say, garlic-makes it not gross. I promise.

15 K: Why can't you just eat like an entire thing of oreo's instead?

Me: *sigh* These lessons are just gonna take time. Go back to high school...you've got a lot of stuff coming your way. Oh but have fun in the musical! Try not to flirt too much with the boys, you look ridiculous.

15 K: *fully ignores me and goes off and does all the stupid things she'll do that'll eventually lead to me now*

As you can see...we've come a long way. Anyway, like I was saying-I've been eating spinach. You already know about the pies/pastries I've been making, and I've also been putting a few leaves in my salads lately (but not too many because 15 year old Kayle is right...they do just taste like leaves and I am not a giraffe).

So, all of this spinach eating made me think about a mashed potato recipe I made a while back. It used kale and...it was fine but...well...kale is super bitter. I could hardly handle it even when camouflaged with mashed potatoes. But spinach, to me at least, has a much more mild flavor so I thought "Hey! Let's see what we can make with that!"

Success! These potatoes are full of delicious flavor (yay roasted garlic, scallions, and parmesan cheese!) but without the guilt! These potatoes have fiber, nutrients, and a touch of good fats. A perfect side dish to make your taste buds and your belly be in complete agreement (even if you and your 15 year old self are not).

Ok, now let's chat about these bars.

Did you know that I smelled spring yesterday?
Scoff all you want, my nose is never wrong. I can smell it coming. Sure, it's still chilly out, I didn't say it was here I said it is coming. 
Anywho, what does my nose's uncanny ability to predict spring have to do with anything? Well, with spring comes warmth. And one of the few downfalls of warmth/heat is that it can be a bit...overwhelming...to bake in it. These "idle hand bars" (don't ask me about the name, I have no clue...perhaps if your hands are "idle" you should busy them by making these?) are going to be perfect for just such occasions. Yes, you do need to use your stove, but otherwise these are a total no-bake wonder! AND you store them in the fridge, so no worries about any food melt-age either. AND...umm...these are gonna be great for all the picnics and barbecues and the like. Sure to be a hit. 

You have this amazing sweet, salty, crunchy base, then a rich peanut butter-y filling, topped with the goodness of chocolate and a nice salty surprise on top. These are crazy addictive, so, consider yourself warned.

Easter Breakfast/Brunch Menu Ideas

Easter is coming! On Sunday, those of us who celebrate Easter, will celebrate Jesus rising from the grave/a giant bunny coming to our houses to deliver us candy!

Right...? :P

Michael and I are in that annoying, kind of sad, phase where we can't have our childhood traditions anymore (because 1-we're adults n such and 2-we moved), but we don't have children of our own to create new ones with either. Sooo, we're not doing a ton on Easter. I'll be making a big dinner but hey that's not super unusual. Whether you're a young'n, in this weird young adult phase, or a full on grown-up, I thought I'd share some of my favorite breakfast/brunch recipes for you to consider making on Easter morning. :)

Sicilian "Enchiladas"- #SundaySupper

EEe! It's my first #SundaySupper post! Yay! So excited to be a part of this amazing group. This week is celebrating the holidays that are coming up-Easter and Passover, and is hosted by one of my bloggy buds, Carla from Chocolate Moosey.

But enough oohing and ahing, let's talk about a little something my family calls "scapelli"/"scapellis" (I have no idea if that's how it's spelled, I've never seen it written, we just say it. I'm told it apparently translates to "hot hands"...maybe in Sicilian or some local dialect? I'm unsure.). My grandma (dad's mom) has been making them, usually about once a year (and almost always for Easter), for as long as I can remember. She learned how to make them from my grandpa Blogna's mom, my great-grandma Helen. So they're some kind of Italian dish, but no one has ever heard of them, and I have had 0 luck finding anything about scapellis on the interwebs. I now am assuming they are some sort of family recipe, that is pretty much exclusive to my family (and possibly any relatives I have back in Italy). Now, let me explain what scapellis are, and if they sound familiar OMG tell me because I'll freak out.

Now...my knowledge is sort of fuzzy. I've never watched my grandma make the whole thing start to finish, and the woman has been insanely stubborn about writing it all down for me. Scapellis are a sort of crepe-like thing (made from flour, eggs, and water), made in a skillet greased with um...saltback, porkback? Something like that. And then they soak in hot chicken broth (wedding soup is usually being made at the same time, so I'm pretty sure she uses the same chicken stock). Now here comes the "hot hands" part. You take out the hot, soaked, scapellis and sprinkle Romano cheese inside, then you roll them up and transfer them to a dish, where they will all be soaked in hot chicken broth again. And you sprinkle more Romano cheese on top of all of that. It's served in a shallow bowl with some of the broth and lots of Romano. It sounds really strange, and simple, and like not that big of a deal.

BUT OH MY LORD IT TASTES AMAZING. We cannot get enough of them. My brother and grandpa hold contests to see who can eat more, but we all gorge ourselves. They're even one of the things my mom misses about that family, so we usually try to sneak her some home. Just....so full of flavor and goodness, yet they're somehow indescribable. It's like...there's no way you can understand their appeal until you try for yourself.

And I like...never get to eat them. I'm rarely home and am lucky if I'm there for a time when they're made. And, like I said, my grandma is being a real pain about getting me that recipe.

Then, when I made homemade tortillas and enchiladas for Michael's birthday, inspiration struck! I could make my own version of scapellis in the meantime! In sort of a scapelli-enchilada hybrid kind of way. Pretty much what I did was use my homemade flour tortillas to try to simulate the flavors of scapellis (and add in some shredded chicken to make it a bit more entree-worthy). And it was a success! These definitely are not exactly the same as my family favorite, but they will definitely keep me happy until I can try making the real thing. And they're just awesome in their own right, as they are. :)

Baked Cheddar and Scallion Mashed Potatoes

Ok people....these are (possibly) like...the best mashed potatoes I've ever made.

I attribute part of this to the large quantity of cheese.

And my beloved scallions.

And for some reason, I find, when things are baked (baked mac n cheese, for example)-I tend to like them more. Plus, it makes this recipe perfect for entertaining! You can just whip everything up, put it in the casserole dish, then wait to bake it when/where your event is! Everybody wins! In fact, I'm planning on making this again for Easter.

Super flavorful, without being over the top, these really are sure to be a hit with just about anyone.

Michael said that I could have even added more cheese.

But then again, I think he'd always feel that way. :P

And it had been awhile since I'd tried a new baked chicken recipe! These are great because they have cheese, like, in their breading. Which adds the wonderful smoky goodness of cheese to these awesomely crisp, baked chicken fingers. For serious, who needs a deep fryer? Not me!

Jessica, from one of my favorite blogs (How Sweet It Is), said in her post that these were the best cookies to ever come out of her kitchen: and I believe it. These are definitely some of the best cookies ever. Michael and I went crazy over them.

Their texture? Perfection-chewy and gooey and just crisp enough (fairly sturdy too, I'd say these would travel well).
Simplicity factor? Ridiculously easy-other than the browned butter you mix everything up in one bowl and don't even need a mixer, just a whisk and your lovely self.
The flavor? I can't even begin to tell you how wonderful. There's browned butter so...you know...obviously all nutty and buttery and complex and perfect-and the combination of browned butter and toffee is magic, like an extra caramelized sweet goodness. And a lovely center of chocolate. YOU STUFF THESE COOKIES WITH CHOCOLATE! WHAT THE WHAAAAT?! (sorry...I needed to use the caps lock again.)

Something Saturdays (3/16/13)

Ok, so I had a mini panic attack on Wednesday when I learned Google Reader is going away in July. Um, that's how I follow the bzillion blogs I read!! If you're like me-then don't worry, there are solutions! So I guess tomorrow is St. Patrick's Day and, I know, I've given you 0 in the way of celebratory recipes. You see, I'm a bit of a St. Patty's day grinch. I'm Irish, but I never really focused on that side of my heritage much, and I've never been a big fan of the color green. And now that I'm an adult(ish) it seems that it's just a day for people to get crazy wasted and act dumb: no thank you. So, my darlings, I'll be working, as I have for the past few years of St. Patrick's Days, and wish me luck amongst the crazies that will have taken over NYC tomorrow.

As you're probably aware, I had like, the best time last weekend. Hayley (The Domestic Rebel) flew from Cali to NYC and stayed with me so we could embark on some epic NYC/foodie adventures! And we had THE BEST time! We ate, we talked about life, we shared some food blogger wisdom (I will now always remember to think "WWSD"), we ate, we laughed, we shopped, we ate, we laughed some more, and ate some more! I got to do things that I'd been wanting to for ages, and share some of my favorite things with Hayley. And, I thought I'd give you a little (mostly food-centric) rundown of our time together.

Right now, I'm probably giggling and having a cartoon-worthy wonderful time with Hayley from The Domestic Rebel, today is her last full day visiting here. Perhaps we're even having breakfast, maybe making it together. Perhaps we are making these pancakes.

Now, if you're familiar with my pancake habits, you know that I eat chocolate chip pancakes (or waffles) with peanut butter spread on top. That is the way I like it. I also like for my breakfasts to be pretty healthy, though, and that is where a recipe like this comes in. These pancakes are made entirely with whole wheat flour and they are fluffy and fabulous. You don't even have to put chocolate chips in em if you want, you could pull a Michael and chop up some apples and throw those in these with a little cinnamon. Really it's up to you.

The first time I attempted to make these pancakes it was a bit of a disaster. After making the entire batch, Michael complained about them tasting funny, to which I replied that there was nothing particularly weird in these. Then he went to have a drink of milk-and it was apparently very bad. The same milk I had just used to make these pancakes. So...into the trash they all went. And I was stuck starving, with a sink full of dishes, and no food. I was a sad Kayle.

The second venture into these pancakes went much better, although I was sort of gun shy this go round, made paranoid by my previous traumatic experience. I worried for naught. These tasted delicious. Fluffy, yet hearty, and full of chocolatey goodness. Then, I was a happy Kayle.

Moral of the story is: make these pancakes and you'll be a happy Kayle too. :)

Now, back to business.

This week marked the 1 year anniversary of the Food Bloggers Network! A facebook group of food bloggers formed by the lovely Jessica of Oh Cake, FBN is a spam-free environment where we can just talk like people, share knowledge, and ask questions. I can absolutely, 100% say that FBN changed my blog. Before it I was barely getting any views, had very little know how, and was just a general beginner. In the past year my views have skyrocketed and I am constantly learning new things, and I credit all of that to the awesomeness of the Food Bloggers Network and it's members. I've made so many friendships and have learned so so much. <3

Pigu

Sometimes I make a recipe that doesn't 100% work out for me, but it's because I did something wrong so, I still wanna share it with you guys, you know? I'm hoping you'll all have better luck. I'm thinking what went wrong for me here was my lack of a a pasta maker thingy to make the dough extra thin: and what's sad is I actually technically have one of those. It's my mom's, my grandma gave it to her as a wedding present and she's never used it, thusly it is mine (as many of my mom's wedding presents have become). I just don't like...have the space to use it right now. Anywhozzle, due to my assumed too thick dough I ended up not making nearly enough of these pigu, and had oodles of filling leftover (although I was able to finagle a use for the filling, waste not want not and all that).

My problems aside, let's talk about pigu.

Pigu is like an Italian dumpling sorta kinda thing? I dunno exactly how to describe it to you, but, it's traditionally made at Easter time. And it's Lent so, yeah. If you like pasta and you like Romano cheese, then you'll love these. These go perfectly with soup, too, just saying.

(Oh and you know what I'm doing right now? Cleaning. Why am I cleaning-aside from normal reasons? Because Hayley is arriving tonight, and it's going to be so. much. FUN!)

"The" Meatballs

I recently made the best meatballs (I think) that I've ever had! Certainly the best I've ever made!

Now, I'm not gonna call these "the best" in the title because...everyone has different preferences. Michael's favorite are his mom's. Some people like pork. Some, like me, prefer all beef meatballs. 

So, like I was saying-to me-these meatballs are the best. Michael REALLY liked them too (he didn't even bring up his mom's, which is a good sign). They have just the right amount of flavor and tenderness, and can be used pretty much any way you prefer to use meatballs. I'm currently obsessed with the idea of using these to make a meatball sub.

Truth be told? 

I liked these so much I ate them plain, with just a little bit of sauce. Because they are that good.

Ok ok! I know, this is crazy! I post on Mondays, not Tuesdays. But, this week is a little different. 
Today I'm participating in a very special cause.

Today we are joining together to help raise awareness for Heart Disease. Kim of Cravings of a Lunatic lost her Mom to heart disease when her mother was 47, and Kim was 15. Each year on the day her Mom passed she shares stories and photos of her Mom. This year she joined forces with Jen of Juanita's Cocina, whose life was also touched by heart disease when her stepfather had a heart attack. Jen's stepfather is alive and well more than a decade later, and for that, Jen is thankful every day. The ladies got in touch with other bloggers to ask them to share their own stories about how heart disease has touched their lives. So today we share stories and recipes from our hearts to yours, in memory and honour of Momzie, Kim's Mom. We hope you will share your stories with us today as well.

I was so honored when I was approached about participating-my heart totally goes out to Kim today, I can't even wrap my head around life without my mom, and to all of you who have lost loved ones to heart disease. I knew that I had to be a part of this. Heart problems run in my mom's side of the family-some of my great-grandparents passed from heart attacks or other heart problems, my mom has had many cousins with heart problems (including an especially tragic story of her cousin who was extremely healthy, a pilot, and unexpectedly died of a heart attack at, like, 30), and one of my uncles has had heart surgery (triple bypass?). But, the most close to home, for me, is my grandfather, my mom's dad. He is the only one of my grandparents that has passed, and he'd had health problems for my entire life. Various factors led to his passing, but the earliest issues that I can recall him having were with his heart. When I was little my grandpa had a heart attack, and subsequently open heart surgery (I thought he had a bypass of some kind too, my mom can't remember and thinks it may have just been splints). It was especially scary for me as a young child, and I recall it being fairly touch and go for awhile. My mom is mostly fine, but she does have slightly high cholesterol and blood pressure. There's not a lot of health problems that run in my family, but I have always known that this was it: the thing for me to keep an eye on for myself and my family-I need to take care of this little hummingbird heart of mine. And so do we all.

Hearts are kind of amazing, right? They have such a big important job-it's the least we can do to just take care of the ole ticker.

One part of being heart healthy is eating right. I realize that eating healthy and my blog don't exactly go hand in hand but...they don't not go together either, you know? I even had that post with a round up of the healthiest recipes from the blog. Now, in some ways eating healthy for dinner and breakfast and for all the meals isn't that hard-throw in some veggies, don't smother everything in butter, voila! But...we still need to have dessert you guys. Dessert makes life worth living. So I am here to give you a delicious, decadent, fabulously addictive dessert that you will LOVE, and your body will love it too :).

First of all, omg this recipe is simple. You mix everything up in 1 bowl, then bake it all up in a dish. Easy peesy-cookie bars are awesome like that. These are easy transportable, so it's super simple to bake some of these up and share the goodness with loved ones or at some kind of event! I've already told you they're delicious-rich, gooey, the perfect balance of peanut butter and chocolate and sweet and that awesome heartiness you get from oats.

And you're wondering-but how are these healthy? These babies are gluten free (so long as your oats are gluten free). They have no butter (all the "fat" comes from the peanut butter and moisture from the applesauce) and only have egg whites (no yolks)-so they're dairy free, and low fat, and I assume low cholesterol (admittedly, that's not my area of expertise). And we all know dark chocolate is like...practically as good for you as broccoli*.

Anyway, if you are being good boys and girls and being healthy and taking care of yourselves-you deserve some of these bars. And you like...won't even be being bad. Health food should always taste so good ;).

Something Saturdays (3/2/13)

And ok, so many exciting things going on this week!

Ever since I began reading Kim's blog, Cravings of a Lunatic, I longed to be featured in her Burning Down the Kitchen series. It was one of my favorite things and I just hoped and prayed that someday...it would be my turn. And you guys...it happened. Kim wrote a super amazing post and did some seriously wonderful things to this cookie recipe, so head on over and check it out!

Woohoo! Baker Bettie is hosting her 2nd annual Cookie Wars (you may remember I participated last year, and the result was one of my favorite cookie recipes to date)! This year Kristina from Whipped, Laura from Ring Finger Tan Line, Charity of Sweets by Charity, and myself, are all helping Baker Bettie out with the first round of judging! Soft 100% Whole Wheat Rolls

Soft 100% Whole Wheat Rolls

Alright you guys, so far, so good on the no meat on Fridays front. Obviously, I am not posting meat recipes on Fridays also because...well that just seems like it's breaking the rules for some reason. Anyway, today I've got like bread for you. But it's like healthy bread.

Soft 100% Whole Wheat Rolls

It's rare to find a decent, 100% whole wheat, bread recipe. These rolls drew me in because of the promise of softness. And these rolls are soft. And they are nice. Michael was quite fond of them. I used them to make breadcrumbs for some things, which was great. But...for me, I just couldn't take all the wheaty flavor. Like I said, however, Michael did like them. He was raised with whole wheat bread whereas I probably never had any until I was like...20. So...take all that into consideration. You probably will like them. You'll especially love that you can feel all good about yourself when eating them.

Soft 100% Whole Wheat Rolls

I suggest honey and butter on these babies. Possibly even jam. 
They're good for breakfast as well as with your dinner.

And since you ate these, you can then have some crazy decadent dessert, right?
