I don't know if you remember, but way back around last Christmas-time, I made some peanut butter cookies. Those peanut butter cookies were special because, they had no flour and NO BUTTER! I know, it's insanity! Apparently, peanut butter was all the butter those cookies needed. They were great.
But...they've been replaced.
By these.
These cookies still have no butter, but they are made with WHOLE WHEAT flour. So...if you're doing the gluten free thing, then these aren't for you. BUT if you love firm on the outside, gooey on the inside, delicious peanut butter chocolate chip cookies made with whole grains and no butter-then these cookies are for you!
Michael and I were both big fans of these. One of the fatal flaws of the flourless/butterless cookies I've already posted was that they were too flimsy, too gooey all over. These are a perfect balance. And, still healthy(ish)! Oh AND they're super quick and easy. Everybody wins! Yayy!
Whole Wheat Butter-less Peanut Butter Chocolate Chip Cookies

Makes around 1-2 dozen, depending on size.
Ingredients:
- 1 cup peanut butter
- 1 cup brown sugar, lightly packed
- 2 eggs
- 1/2 cup whole wheat flour (or whole wheat pastry flour or whole wheat white flour)
- 1/2 cup oats
- 1 tsp. baking soda
- pinch of ground cinnamon
- 1/2 cup chocolate chips (of your choice)
- Preheat oven to 350 degrees.
- Line baking pan(s) with parchment paper/silpat.
- Beat peanut butter and sugar with a mixer for 3 minutes.
- Beat in eggs, 1 at a time.
- Mix in flour until just incorporated.
- Mix in oats, baking soda, and cinnamon. Don't over mix!
- Stir in chocolate chips.
- Scoop cookies (using an ice cream scoop or medium-large cookie scoop) into even mounds of dough, and place onto the sheets-leaving enough room for cookies to spread.
- Bake 10-12 minutes, until just golden brown on top.
- Cool on a cooling rack, parchment paper, or a kitchen towel, etc.
- Eat!
There are few things I love more than the inside of an ooey, gooey, warm cookies.
