Parmesan Panko Potatoes

I love alliteration, don't you? It's fabulous and fun to find fanciful foundries, I give up. Anyway.

Lent update: I haven't cheated yet! I have been keeping up not eating meat on Fridays-yayy!  Last week I was working and my supervisor took me to lunch-and I was tempted to eat steak. But Michael reminded me, it was Friday, so we actually changed restaurants and I ordered a pasta dish.

In the meatless spirit, I have a potato dish to share today. It's a side, and a healthier alternative to french fries. They're pretty tasty-I hope you enjoy!

Parmesan Panko Potatoes

Adapted from a blog that has since been deleted, sad :(

Parmesan Panko Potatoes

  • 3 Russet potatoes
  • 3 tbsp. olive oil
  • 1/4 cup panko breadcrumbs
  • 1/4 cup grated/shredded Parmesan cheese
  • garlic powder, pepper, and parsley to taste
  • Preheat oven to 450 degrees.
  • Clean and peel potatoes. Slice into 1/4 in. thickness (thinner=better). (FOR POTATOES. NOT GIRLS. SO...YEAH)
  • Place cut potatoes in a bowl, add olive oil, mix well.
  • Add panko, Parmesan, garlic, and pepper. Stir/mix well.
  • Spread potatoes onto a baking sheet lined with parchment paper.
  • Bake 18-25 minutes.
  • Remove from oven and sprinkle with more Parmesan. Garnish with parsley.

  2. This is a great way to get some crunch into potatoes without deep frying them! The use of Panko is an excellent idea. Bravo to you for sticking with the no meat friday plan. Have a great weekend.

  3. thinner=better LOL Ok, anyway... I admire your commitment to abstaining from meat during lent. Honestly, I haven't really abstained from anything (although I did start excising more, so many that counts?) but I think I could give up meat without a problem for a few months ;) And a very creative take on potatoes by skipping the fry-daddy...

    1. Ahahahaaaaaaaaaa I did not give up meat for Lent--I could never survive. No no no, just on Fridays. Everyone is supposed to not eat meat on Fridays during Lent, I just stink at it so I've never been successful. Hopefully this year I can do it ;)

  5. I love this recipe! Super easy! Baked, not fried :) I think my kids will like this and I would simply substitute nutritional yeast flakes for the parm.

  6. These look so good! I've been using panko bread crumbs like crazy on chicken fingers lately...but need to branch out into potatoes next :)
