Healthy and Chewy Chocolate Chip Cookies with Nuts

 Sometimes you want cookies, but you don't wanna feel guilty about it (if you're the kinda person who does that). That's where these cookies come in. They're HEALTHY!

Maybe this is my way for apologizing for giving you that totally not healthy breakfast "muffin" on Monday. Because honestly? These cookies are probably a much healthier breakfast.

Either way, let's not worry about it. Let's eat cookies and glare at people who look at us funny and then say "Um...these cookies are healthy. Kthanksbye."

Healthy and Chewy Chocolate Chip Cookies with Nuts

When you're eating these cookies, you will not feel like you are eating something healthy.

This will not feel like a sacrifice.

All you're gonna know is that these cookies are chewy, and have delicious chocolate chips and (in my case) peanuts, and that you love them and would like to eat a bunch. 

But guess what? There are about 8 tbsp. of sugar in these babies. TABLESPOONS.
And no butter, just 2 tbsp. of wonderful healthy coconut oil.
Oh yeah and they're gluten free-nothing but wonderful, filling oats.

This is insanity. These are so yummy, I have no clue how it's possible. But it is. You need to have these in your life.

Healthy and Chewy Chocolate Chip Cookies with Nuts


Healthy and Chewy Chocolate Chip Cookies with Nuts
 Makes 12-20 cookies.
Ingredients:
  • 2/3 cup + 1/2 cup (140g) oat flour (you can buy it or process oats in a food processor until fine)
  • 1/4 tsp. salt
  • 1/2 tsp. baking soda
  • 4 tbsp. brown sugar, packed
  • 4 tbsp. granulated sugar
  • 1/4 cup nuts (I used peanuts, but use whichever kind you prefer)
  • 3 tbsp-1/2 cup chocolate chips
  • 1 tsp. vanilla extract
  • 2 tbsp. coconut oil
  • 3-5 tbsp. milk
Preparation:
  • Preheat oven to 380 degrees. Prepare baking sheet(s) with parchment paper/silpat.
  • In a medium-large bowl, combine dry ingredients.
  • Mix in vanilla, coconut oil, and milk, until the mixture forms a thick ball.
  • Form into medium sized balls of cookie dough. Space evenly on baking sheet(s). Refrigerate until cold.
  • Bake 7 minutes, they should be slightly under-cooked. Leave on tray and cool at least 10 minutes.
  • Store in an airtight container (preferably a lidded plastic container).

Well, it doesn't taste healthy either :)
