Chocolate Chantilly

While the weather is still warm, I'll share a delicious, refreshing (yet decadent and rich) no bake dessert for you. And it takes time at all. And very little effort. But seems super fancy and like you went to culinary school and stuffff.

This recipe is revolutionary. It takes 3 ingredients. No baking. Just ice water. The result is a beautiful, velvet-y textured chocolate mousse that melts in your mouth. I don't even know what else to say about it. And to be frank, I'm a busy bee right now! So I shall not delay any longer, to the recipe!:

Chocolate Chantilly
Makes 4 servings.

  • 9.35 oz. (265g) chopped chocolate or 10 oz. chocolate chips, 60% cacao or higher.
  • 1 cup water
  • 4+ tbsp. granulated sugar
  • extra ice and water
Chocolate Chantilly
  • Fill a large bowl with ice and enough cold water so that the ice is mobile.
  • Set a slightly smaller bowl inside the large one, so that the bottom is in contact with the ice.
  • Heat sugar and water in a medium sized saucepan on low heat until the sugar dissolves.
  • Add the chocolate and stir until melted.
  • Pour chocolate into the cold, smaller bowl. 
  • Maintain the bowl's contact to the ice water at all times and whisk the chocolate until it is thick-don't overwhip though! If it becomes grainy transfer back to saucepan, melt it, and try to whisk it over the ice again.
  • Divide into 4 ramekins (or other containers), and serve. 
  • Store leftovers in refrigerator.
  • Note--sources said storing in the refrigerator would make the mousse grainy, but in my experience it was perfectly fine.
