I have a bunch of biscuit recipes to share with you (not all at once, today is just this one). It seems like such a silly thing to have made a bunch of versions of, but, biscuits are great! They're a quick, easy, and delicious breakfast! Flaky, buttery, and warm-it's a great way to start your day!
This was actually the first recipe I had ever used to make biscuits (except for the cheddar ones) from scratch. I've learned a lot since then. This recipe played a part on my road to growth. I learned you can use a food processor to make biscuits, super duper easily (I also learned this lesson from this pie crust).
I also learned-so what, I don't have a biscuit cutter? The rim of this cup is the right size and will do just fine. And it did.
Truth-I really am proud of how far I've come. From the little girl who used Jiffy muffin mix (the only thing I was allowed to make, my mom was paranoid about messes in the kitchen), to the kid who took pride in her scrambled eggs, to the teen who mostly cooked out of boxes (mashed potatoes, oreo pie, etc.), to the young girl in New York, slowly learning from those around her, then becoming obsessed with recipes online, to the young woman who started a food blog, then got her own kitchen, and has now made homemade pizza, ice cream, even used yeast! (that was a long run on sentence. Apologies to any English teachers in the audience.) I have come a long way indeed, and I still have so much further to go. I'm excited for the journey-and I hope you guys will stick with me through it. :)
Simple Biscuits
Adapted from kitchenMage's Simple, flaky biscuit recipe
Makes 6-8 biscuits
Ingredients:- 2 1/4 cup all-purpose flour
- 3/4 tsp. salt
- 1 tsp. sugar
- 4 tsp. baking powder
- 5 tbsp. very cold butter
- 1 cup very cold milk
Preparation:
- Preheat oven to 450 degrees.
- Place dry ingredients in food processor and pulse for a few seconds (if you don't have a food processor just mix together in a large bowl).
- Cut butter into small pieces and add in with the dry ingredients.
- Pulse in food processor until the butter pieces are approx. the size of peas (you can use a pastry cutter or 2 knives for the step if you aren't using food processor-or just your fingers).
- If using food processor-transfer to a bowl and add milk. Toss gently until just barely combined.
- Put dough onto a lightly floured surface and knead until the dough forms a cohesive ball. Roll into a 1/2-3/4 in. rectangle and cut out 2 in. circles (may have to re-roll, try to minimize).
- Place the circles on a parchment lined baking sheet.
- Bake 8-10 minutes, until lightly browned.
- Serve warm with butter, jam, or honey (or whatever you so please).
