I had some leftover chocolate chip granola hanging around and decided I wanted to make waffles with that. And I loved the last waffles I made so much I wanted to use that recipe as the base-but altered to be a bit healthier. Annnnd HOORAY-it worked!
These waffles taste hearty and chewy with just a hint of crunch and mmmm...they're just a great day to begin your day! Whether you top them with fruit, butter and syrup, or peanut butter.I know that I've been eating them for breakfast every day for a week and I have 0 complaints :D
Whole Wheat Granola Waffles

Adapted from this waffle recipe
Makes 4 Belgian waffles.
Ingredients:
- 1/2 cup all purpose flour
- 1/2 cup whole wheat flour
- 3/4 cup granola
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 5 tbsp. coconut or canola oil
- 2 eggs
- 2 tsp. vanilla extract
- 1 and 1/4 cup buttermilk (or buttermilk substitute)
- Optional-chocolate chips
- Preheat waffle iron according to package instructions.
- Whisk together the flours, granola, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the oil, eggs, vanilla, and buttermilk.
- Stir the wet ingredients into the dry until just combined-may be lumpy. If desired, mix in chocolate chips.
- Cook according to waffle maker directions. Serve!
- Store leftovers in a freezer bag in the freezer for up to 1 month--reheat in toasted or in a 350F degree oven until heated through and crisp.
