I think this is my new favorite quick and easy bread recipe! I was honestly shocked by how simple it was to throw together and then you just have to wait about an hour for it to rise and about half an hour for it to bake and then...TA DA! French bread!

I think my current favorite use for this recipe is for garlic bread--that's what I made it for initially when we had Michael's friend over for dinner. You can make it the day of or like a day ahead of time and it helps you make seriously delicious an brag-worthy garlic bread (seriously...look at people's faces when you tell them you made the whole thing from scratch, even the bread. They will be impressed!) Slightly crusty on the outside, nice and chewy on the inside. Gotta love a delicious and easy recipe for homemade bread, am I right??!

I'm always up for a new chicken recipe! Are you? I hope so because if not...well...you're probably only here for desserts and don't worry, I've got one of those coming to you on Wednesday.

So really we're all winners.

This dish was really delicious-the chicken is juicy and flavorful and the sauce is creamy and cheesy and...herb-y...? Herb-y isn't a word...herbaceous? I don't know if that really applies to this...oh whatever, you guys get the idea! It's a creamy sauce that is made with boursin (one of my fave kinds of cheese), yummy shallots, and garlic (of course)-and you make it in the same skillet you cooked the chicken so all of that goodness is up in there, too. I sent Michael some in his lunch and he texted me an enthusiastic "This chicken is so good! What's in the sauce?" and then after I told him he proceeded to make a pun about the Lady of Shalott that went over my head and then he had to explain it.

After all these years...there is still mystery. Keepin' the magic alive, folks.

Especially the magic of delectable chicken dishes.

Michael's about to get spoiled by ice cream again, now that I've gotten the hang of my ice cream maker. Almost immediately after polishing off his strawberry ice cream, he requested coffee ice cream with chocolate chips. And I, being the nice wife that I am, obliged. Luckily this is another super easy, no cook, recipe! Hooray!

I technically used instant espresso powder in this recipe, so I wasn't sure if I should call it Espresso Ice Cream but....it's a kind of coffee so...whatever. Anyway this recipe turned out super gorgeously creamy and smooth. The coffee flavor is very present without being too overwhelming, and it has just the right amount of sweetness (sort of like a cup of coffee with a good amount of sugar and cream--just the way Michael likes it, lol.) And even when it had been in the freezer for days it was still super easy to scoop and never got too hard! I'm really pleased with how it turned out, and Michael is obsessed with it. Extra bonus-it makes a good amount of ice cream so he can happily eat it without running out for awhile. And I can focus on making cookies. Everyone wins :)

Mom's Pot Roast

Meh. It'll do. The important fact to take away is this: I love my mom's pot roast. And I have been unable to replicate it myself. UNTIL NOW! YIPPEE!

This pot roast recipe has been my white whale for YEARS now, and what's funny is....IT'S NOT EVEN HARD TO MAKE. Like....it's kind of insanely easy (you don't even need to sear the meat--the only dish you're gonna dirty is the crockpot! And cutting board...but still.) So why did I have problems? I didn't have the correct kind of slow cooker--I had a super old one that didn't have low and high settings-it had temperatures. And it seems like it couldn't cook it slow enough. I don't know, but what I do know is that I now have a real, beautiful, crock-pot and I took my mom's roast and made it my own.

This was the recipe that my mom would always make for my birthday, or when I came to visit. And apparently the fact that I love roast caught on because then my mothers in law also started to make me their recipes. And they're ALL good. But...you know. There's something about the recipe that you grew up with...it's special. So I'm a bit partial. But...you know...I also am pretty into this whole cooking/baking thing. So I very slightly improved upon the recipe. But in minuscule ways (namely I added onions and I cut the potatoes smaller so they would cook all the way through, as my mom's tend to be hard and uncooked in the middle sometimes because they're too big of chunks).

Anyway. Let me tell you about this roast--it falls apart. Like...insanely tender. SO flavorful. And you can really add any veggies you want (like carrots, for example) but I'm a big fan of potatoes and onions (yes...those orange veggies are potatoes--cooking in the juices turns them that color. And makes them melt in your mouth delicious). This is gonna be your new fave. I'm so excited. It was so good.

One of my oldest recipes on this blog is still one of my favorites: Just Chicken Pot Pie. It's all the rich yumminess of pot pie without all those yucky vegetables (hehe...). Sooo when I saw the idea of a pot pie pizza I immediately got excited to try it--but a "Just Chicken Pot Pie" version!

Soooo-what is this pizza, exactly? It's a delicious chicken-y pot pie filling (made from onions, butter, chicken broth, and milk-mostly.), shredded cooked chicken, and cheeeeeese. All on a pizza crust. It's actually super simple and is def. a great option for any picky eaters in your house! I

I was super due for a new pizza recipe, so this could not have come at a better time. Plus Michael was only luke-warm about it (he felt like it was too bland, which is a common complaint when I make foods that I like lol)---which you may think is a bad thing but NO because it meant MORE PIZZA FOR ME! It's cheesy and rich and chicken-y and just mmmmmmmm mmmmm! (I'm very eloquent about my food, as you can see!)

As I've mentioned before-Michael is a big fan of variety. And he has a big appetite. So I often struggle with making enough food and enough different kinds of food to keep him satisfied. Which is why I was SO thrilled when I came up with this super simple dinner idea and he loved it!

One of the best parts of this recipe is-in addition to the fact that you cook an entire dinner together in the oven-that you can completely customize the flavorings based upon preferences. I went a slightly spicy route using chili powder and paprika, but you could also do soy sauce and ginger, or garlic and herbs, etc. Also, you can switch out the veggies according to preference-I used broccoli but you could use whatever, or a combo of different vegetables. (Heck, you can even use chicken instead of fish!) And in the end you have flavorful rice, veggies, and fish all cooked up together. It's perfect. My solution to weeknight dinners for my hungry hungry hippo of a fiance' and I know it'll be a great option for your family too!

Michael is a guy who NEEDS variety in his food life! Unfortunately for him...I errr...don't. And I have a difficult time thinking outside of my chicken/potato box oftentimes. Which is why I was THRILLED when I was forced into some creativity by Hillshire Farms when they asked me to make a recipe using their Smoked Sausage.

And...wow...it could not have been simpler!

Hillshire Farms Smoked Sausage requires like...no effort. You just take it out of the package and it is ready to be used! Whether you decide to throw it in a pasta sauce, make a chili or stew, put it on a pizza, etc! The options are endless and kind of crazy easy! Now, I decided to make some fried rice with the smoked sausage because Michael loves Asian food and I never make it, so this was a double opportunity for changing stuff up! And it took me no time to make, which means it is the perfect weeknight dinner option!

The first person who tried this fried rice was my brother and he immediately texted me how good it was! He really loved the flavor the sausage added (which makes sense since Hillshire Farms experts have perfected the pre-seasoning of their sausage over the last 75 years!!) and the fact that it was the perfect post-workout meal (*shrug* he's pretty health conscious these days). And he hoped Michael wouldn't like it so he could have more, hehe. Michael DID like it (a lot), but we were nice and let Josh have some more also. Because when you have the option of making such a quick and perfect dinner...there's no reason not to share!

I thought I didn't like Bob Evans. I thought I wad too good for Bob Evans.

Turns out? I'm not. And I love it. Specifically--I love their pot roast and their deep dish chicken noodles entree. So when I made this recipe (which I found in one of my cookbooks)-I had imagined it would taste somewhat like that.

I'm gonna warn you-it doesn't. BUT: it's great in its own right. Let's discuss.

First of all: I love how simple and comfy and cozy this is. Like...you'd imagine it would be the sort of thing your mom would make for you. And it's EASY-you just throw some stuff in your slow cooker and leave it alone until it's time to eat! It tastes pretty much like chicken noodle soup, but  creamy chicken noodle soup. AND even though all these pictures show the chicken over noodles...I highly recommend serving it over mashed potatoes! Then it becomes like an almost gravy/soup hybrid with the potatoes...and it makes it even more comfort food. So, next time you have a rainy day--make this slow cooker creamy chicken!

Crispy Potatoes

Michael's mom makes ridiculous amounts of food. Like...always. Anytime we're eating there she makes, like, 8 things at once. It is insanity. Delicious insanity but...still. One of the more common meals we end up eating over there is breakfast/brunch (or 2nd breakfast or elevensies...they enjoy LoTR). And my fave thing that makes an appearance during these "breakfasts" are her potatoes. They're super crispy and sort of spicy (to me anyway, which means to normal people they're probably not very spicy at all) and I've seen her make them and I'd witnessed how simple and quick they are to make!

So I was like...duh...let's do this.

All you need to do is stand in the kitchen and watch your adorable, 4'10" future-mother-in-law quickly chop up some potatoes and...oh...wait...you don't have your very own Mama Maria?

My bad. We'll discuss the method where you make these yourself and you don't just keep your fiance's mom company in the kitchen while she whips them up with enviable speed (whilst also having like 10 other things cooking at the same time...seriously...I do not know how she does it. She sets an impossible standard. But I digress.)

Something pretty awesome about this method of cooking potatoes (aside from how easy it is) is that it's completely up to you how you want them to taste. Season according to your personal preferences! Michael's mom uses paprika and salt and pepper--maybe you want rosemary! Or truffle salt! Or maybe chili powder--it's entirely up to you. And then you can serve them aside eggs or crepes or with steak. And they're crisp on the outside and soft on the inside and so rustic looking and they taste like maybe a cowboy made them for you...like...in a good way.

Because, in my case, it's usually a sweet little Italian woman making them for me.

Rich, creamy, flavorful, healthyish pseudo-alfredo that makes minimal dishes and Michael actually likes.

IT'S DECEMBER. Which means it's officially the Christmas season. Which means I can figure out how to decorate my new house. It means I get to watch Christmas movies. I can listen to Christmas music and no one can say anything about it! 

And there's gonna be cookies. Lots of cookies.

But sometimes we need to eat non-cookie things. And maybe we want that thing to be pasta.
One Pot Garlic Parmesan Pasta
I've already made this pasta twice. Because it is so good (also it doesn't make a ton of pasta so it was gone allll too quickly). Listen up to how this goes down: you make a sauce from chicken broth, milk, butter and garlic. Then you cook the fettuccine right in the sauce! This means you make everyone in one pot and it also means that the noodles soak up that flavor as they cook and this thickens the sauce in the process. You finish it off with some parmesan cheese (and maybe fresh parsley if you have it) and you're done!

The result is super creamy and rich and no one will ever believe that you didn't use heavy cream and tons of butter. Which is awesomeness. I will give you a couple pieces of advice: it's easy for the noodles to stick together so I suggest breaking them in half before throwing them in to cook and also just consistently stir and try to keep them separated. Also, the sauce gets extremely thick and somewhat clumpy as it gets cooled so it is definitely best served fresh, but you can add some milk and try to heat it back up to thin it back out if necessary.

Sometimes inspiration hits you like a sledgehammer.

One day I was just on facebook, like I do, and I saw a girl I knew from high school posted a promo from a restaurant about how their "Mashed Potato Pizza is Back!" and I was just like "WHAAAAA??!"

And I knew I must make it.

What does a pizza consist of? Crust, sauce, cheese, toppings.

Pizza is always the perfect dish because you can completely, 100%, make it according to your preference. I used whole wheat thin crust pizza crust, because I like it. You can use whatever suits your fancy-whether that be store-bought or your favorite recipe. You can also use regular, plain old mashed potatoes or jazzed up ones (like garlic mashed potatoes! Or ones with sour cream!)--and you can use fresh mashed potatoes or save on time by using leftover. Top it with your cheese of choice. And then whatever toppings make you happy-which for me are chives/scallions. For you it might be bacon. Who knows!?

Also, if you're extra special and get your hands on some STAR Grilling Cuisine Cooking Oil (with garlic!) it makes a tasty addition when brushed onto the pizza dough before baking. Just saying.

It's fall. Comfort food season. What's more comforting than pizza AND mashed potatoes?!

Caramel corn is super duper delish. It's portable, it's addictive, it's crunchy, it's sweet and salty and just....YUM!

But...ugh. It is a hassle to make! That is why this recipe is AWESOME! So much quicker and so much easier, it's a gift from the caramel corn gods!

Now, I will say, when it comes down to it: I still prefer my old favorite caramel corn recipe. BUT, like I said-a hassle. This recipe is my new go-to when I have a hankering and I just want to be able to whip up some caramel corn quickly and easily and without such a big mess and with A LOT less dishes! (woot! wooooot!)

Hey-when you say "caramel corn" do people ever think you mean candy corn? This has been a mixup that's happened a couple times in my life recently. It's like...nono I know candy corn is awful. I'm talking about CARAMEL corn...you know...popcorn....coated in caramel. Like from the circus or a fair or just that super cute gourmet popcorn kiosk in the mall?

Anyway. So. Here's what we've got: pop some popcorn in a brown bag (which we've talked about before), mix up some caramel in the microwave (surprisingly simple!), then-now, prepare yourself, this COULD get messy, make sure your brown paper bag is sturdy!-you pour that caramel in the bag with the popcorn and shake it until it's all coated, THEN microwave, THEEEN shake it, THENTHENTHEN microwave it some more. Then shake it again. Then lay it out and let it cool and harden. TA-DAAAA (or, as the little girl I babysit says "DAAAAAA!") you have caramel corn!!! It's going to be crunchy, but still a little sticky (so be prepared to find delicious leftover morsels in your teeth for the next couple hours :P). 

And there you have it: simple! Gotta love a microwave.

I'm a morning person. I'll admit it. I'm that girl. In high school, I used to do the morning announcements and drive everyone crazy with my overly awake and perky voice. Sorry guys but...once I'm awake, I'm AWAKE. Even so....I tend to find myself dragging my feet when it comes to actually doing stuff in the morning. Particularly making food. Because I'm tired and hungry and I just wish food would magically appear in front of me, no effort required.

Now, while I don't have the magical ability to summon up an instantaneous, effort free, breakfast....this recipe comes pretty close.

You pretty much just combine some ingredients in your favorite mug (yes...I made mine in a Disney princess mug and yes...I made Michael one in a Batman mug. I enjoy this about us. I think it's charming. sooo...yeah...) then you microwave for a few minutes and...that's it. You have coffee cake.

Now, on the real real...not my favorite. It was fine just...I dunno...I felt like the cake was a bit bland tasting. Not enough cinnamoooon! It was good though, especially considering it took like 5 minutes to make. I just prefer real coffee cake

That said-Michael really enjoyed it and didn't see anything wrong with this simple little breakfast. And just imagine how much fun something like this would be if you have a bunch of girls waking up after a slumber party at your house! Or if you partied hard last night and need a quick easy breakfast. You know...just depends on your current life situation.

Or you could just be like me, a perky little Disney princess, waking up, singing with the birds, and then being like "ughhh but...doin' stuff?" and then remembering, "Oh hey! I can have a little coffee cake in my belly like..practically right now!" and then you run to the kitchen.

...and to be honest..if this is me we're talking about...and I'm running to the kitchen...

...I probably trip.

I'm baby obsessed (seriously ask anyone, I ADORE babies. If I see your photos of your baby on facebook or instagram...that just like...makes my day. I fully intend to have a bunch of little ones myself someday and I just love em!) and Stef obsessed, for that matter, so when Stephie (my girl from Eat Your Heart Out) asked if I wanted to join in on a virtual baby shower for Stef, I immediately said YES!

Food bloggers (or maybe just bloggers in general) are weird creatures. I know that.

Nobody outside understands. I tell them I'm a part of a virtual baby shower and they're like "...so...they don't actually get to eat the food you're making for them?" and I'm like "well...no...but it's in spirit...just..ya know...ugh you don't get it." It's a thing though, ok? Just trust it is our way of saying WE LOVE YOU to our bloggy buds!

This is Stef and her husband Mike's first child, and I am just so psyched for them. I honestly can't even imagine how overwhelming and exciting this time must be for them! Stef seems totally cool as a cucumber though, and I know she's gonna make an amazing mom. When trying to brainstorm ideas for what to make for this post, I asked Stephie for any ideas, if Stef was craving anything in particular, etc. etc. and she mostly just said she's been a pickle fiend. Which of course made me think of the old pregnant woman stereotype of pickles and ice cream. And I figured well...if she's gonna eat her pickles, she might as well enjoy some spectacular ice cream as well, right? So I asked Stephie if she thought Stef would like the idea of salted caramel ice cream to which she responded, and I quote, "That's gonna get a resounding YES YUM ALL THE CARAMEL ICE CREAM THINGS response from her, haha!" So...there ya have it.

And, BONUS, since I'm sure Stef is busy preparing to be a mom, and will be even busier BEING a mom, this ice cream recipe is the no ice cream maker method. Which is the super easy, super quick way of making ice cream that I am addicted to

And we all remember that amazing salted caramel sauce recipe I shared on Monday? Yeah this ice cream tastes exactly like that...but in ice cream form (although feel free to use any caramel sauce you like). So prepare for incredibly rich, delicious, salted-caramel-flavor-packed ice cream! 

(and um...sorry for the not so inspiring photos. This particular ice cream recipe turned out rather soft so it didn't make for the most attractive pictures. Still looks delicious though, right? Right.)

So Stefanie, CONGRATULATIONS on your pregnancy, and your soon to be new little baby boy! I hope that all of us telling you you're amazing makes you smile, and that you want to eat your computer screen. Because of all the deliciousness we've made for you. <3!!!

Oh, hi, I'm Kayle....I like to over-complicate things.
  • I have folders and files and tiny little details figured out for my wedding....and I'm not actually engaged yet.
  • In that same vein...I will literally stress about and plan out things for a theoretical future that's not quite here yet.
  • I have to explain my very specific orders to those poor waiters and waitresses at restaurants.
  • Also...can I have water with no lemon?
  • I see a recipe for something that's super easy, and I go "...but what if I made everything from scratch?"
  • I see a recipe that already seems like it could have everything you could possible want and then I go..."maybe I'll brown the butter and put sea salt on top."
You know what? I sort of love my brain.

Sooo yeah....let's face it: if I see a recipe with melted butter....I'm gonna brown it. That's practically a given. And I might be an eensy weensy obsessed with putting gorgeous big flakes of salt on top of sweet things. GUYS-it's just sooo gooood!! Do not knock it 'til you try it-it seriously just balances the sweetness in just the right way.

Oh and I maybe used homemade nutella to "swirl" on top. Note the quotation marks because um...homemade nutella doesn't swirl too well....it's too thick. So these maybe aren't as pretty as they could be. But ya know what? I don't care because they taste FANTASTIC!

To sum up: a delicious, chewy, blondie base (with no white sugar, only beautiful beautiful brown sugar), made with browned butter. Then some chocolate and peanut butter chips are mixed in. Then ya put some nutella on top. Bake em up, sprinkle on some salt, and there you have it: a super complicated recipe.

But here's the secret: not complicated. This whole thing is mixed up in one bowl (ok...not counting the pan you brown the butter in), whisked together (no mixer!), and made and baked in like 30 minutes. So uh...yeah...turns out this is SUPER quick and simple. 

And obviously out of this world yummy, packed with all your favorite things.

(Sometimes) I'm a nice lady.

Now...technically these are supposed to be fish sticks buut...I may have not cut the fish small enough? So it's more like just...baked fish?
When I look at these pictures, it actually reminds me of "fish 'n' chips"...minus the chips.

Michael loves fish and chips. And fish and chips make me think of British things, which makes me think about some of the hilarious people in my life. Let me elaborate:

Michael's best friend, David, is obsessed with all things British. He teaches Brit Lit at the high school Michael and I attended. He's basically in love with Queen Elizabeth (Tudor). His twin girls know all about the royal family-his daughter Kate especially loves hearing about Princess Kate. He has British flags um...everywhere.

One of my good friends in high school went through a strange phase senior year where...out of nowhere she would say something in a British accent and just speak like that for awhile and if someone pointed it out she'd be all "Oh? What? I am? I didn't even notice that! Strange." Um...you'd never been to England. You were just doing a strange thing and acting like it was unconscious lol.

Another friend in high school was also very obsessed with England (in addition to early, 18th century, America. She loves her some Thomas Jefferson). In college she did a semester abroad there and guess what? She bagged herself a Brit! Her first real boyfriend turned out to be an English boy and even after she had to come back to the states they visited each other often and then, a few months ago, they were married in a super charming wedding in the English countryside.

Anyway, all those British stories don't have much to do with anything. I just think it's funny the obsession some people have with British culture. Even those of us who aren't obsessed are fairly interested in, say, Kate & William and little Prince George. 

Back to fish: I adapted this recipe a fair amount to work with the ingredients I had on hand, and I think the result was even better that way! Michael really really enjoyed these and if you like fish (and/or British culture? :P) then you will too! They're also pretty darn quick and easy to throw together, and on the healthy side. Huzzah!

As a kid it was like this treat that I adored-my mom didn't let me do them often (I didn't do a good enough job, I guess?) so it was so fun to me. Then when I would go over for dinner at my best friend's house, her dad would tell me I had to wash the dishes (something about me eating their food so needing to wash the dishes...ironically when Alex was at my house she'd say "I'm the guest! Guests don't wash dishes" and I'd look at her like...hmm...something here seems off). After a few times of that...it got old. Gone were the fun days of dishes. And now I do them daily. *sigh*

So...it's sort of nice when I make something that doesn't require a bunch of dishes, because that means less for me to wash later! Hooray!
One Pan Chicken Alfredo
Enter this one pan chicken alfredo. It's creamy, garlicky, and I healthified it a bit. Instead of heavy cream I used fat free evaporated milk, which I think doesn't compromise the flavor at all, so win! It's def. a nice, easy, tasty dinner. Without the regret you get when you've dirtied a ton of dishes. 

Honestly, it's not my most favorite. Partly because chicken alfredo isn't my most favorite. And it's not creamy enough for Michael. So, while we did like it, it probably won't make frequent appearances here in the apartment. But it'll ocassionally pop up. Like a friend that you kind of like and enjoy seeing occasionally, just not all the time, ya know?

Skillet Breakfast Potatoes
I'm going to share a tale of food blogging/photography woe.

I know my food photos could be better. I look at other photos and read tutorials and tips and tricks, because I want to improve. And I'm getting better, but I know I'm not doing a lot of things I need to and the photos are still not as good as I'd like for them to be. But, I have a few things working against me.
  1. I don't have like...a real camera. I've got a point and shoot. Now...it's a good point and shoot, and I like it, and it's easy to use (which is part of what scares me about DSLR's) But I've seen the photos those good, like...actual photography cameras can take. And they're just...so good.
  2. Space....I have none. I literally can only photograph in the tiny corner by my kitchen window and my oven. A lot of food styling tips are difficult for me because I can't use a table or a counter, I use a stool. Yepp...a stool. I set a stool up in that corner and put stuff on it. Gettin' creative in this tiny apartment.
  3. I think my brain is just broken when it comes to food styling. I think it's the same reason I suck at scrapbooking. I dunno.
Anyway, the point of this story is...in spite of all this...I really really really like these photos.

Also send me a DSLR :P

Now that I've complained, let's chat about potatoes, hm?

I love em. LOVE EM. These especially.

It was morning when I made these, and I was busy washing dishes and such, but I wanted to get on these so I asked Michael to play sous chef and chop up the potatoes for me. Poor dear...it took forever. He did such a good job, though! What a champ! After all that hard work, I think these potatoes had extra pressure to be so delicious, so that they were worth it.

Uh yeah...consensus says worth it.

These potatoes are perfectly seasoned (ok...you'll realize when you scroll down I didn't write down amounts for seasonings that's because...I just used my instincts. That's part of what makes them so great, right?!) and wonderfully crisp on the outside and tender on the inside. Seriously...don't just eat them for breakfast. They're too good to be relegated to only one meal. Eat em for lunch. With dinner. 

Really all that matters is that you eat them.
