I've spent a lot of time singing the praises of Levain Bakery back in NYC. They pretty much the most fantabulous, GIANT, cookies ever. They're sturdy on the outside and somewhat underbaked and gooey in the centers. They're pretty much a phenomenon and I miss them like crazy. They have 4 different kinds of cookies- chocolate chip walnut, dark chocolate chocolate chip, oatmeal raisin, and dark chocolate peanut butter chip. I've tried all of them except the oatmeal raisin (because...I mean...it seems like the real wrong choice of the 4 if you ask me). My favorite is the chocolate chip walnut--which I've already posted a copycat for. And today I'm posting a copycat recipe for my 2nd fave: dark chocolate peanut butter chip....MMMMmmmmmm!

The cookies are big. Like...beyond big. Like full-on GIANT. Because that's part of what makes Levain style cookies so amazing-they're huge and almost biscuit like on the outside, but gooey and slightly underbaked inside. And these ones are SO SO SO RICH. Super chocolatey, with lots and lots of gooey peanut butter chips. If you're the kind of person who drinks milk...you're gonna want a big glass. I, personally, just bask in the decadence. These are a show stopper my friends, not for the faint of heart!

Twas the week before Christmas and all through the house...

Tomorrow I'm going to DIIIIIISNEY WORLD! And in 1 week it's CHRISTMAS!
eeeeee so much excitement is happening!

Tomorrow I'll fly down to Disney, where I'll meet up with my mom, brother, godmother, and her 2 daughters (they'll have just gotten off a Disney cruise) and then we'll spend 2 1/2 days in Disney!  THEN we'll all drive back to Ohio for Christmastimes. It's gonna be insane and crazy and busy and fun and AMAZING!

Now, obviously we're not all going to Disney World tomorrow. But, no matter where you are, I'm sure all of us Christmas celebrators are pretty. darn. BUSY right about now! And a lot of that business is in the holiday tradition of baking. Baking cookies, especially. Whether they're for you, your family, co-workers, Santa, all of the above and more, there's a lot going on. So, I'm here to give you pretty much the easiest, simplest, and tastiest little cookie recipe. PERFECT for your holiday baking!
2 Ingredient Peanut Butter Cup Cookies
Ya ready for this?

Reese's peanut butter cups. And an egg. 
THAT'S IT. You process some Reese's, mix em with the egg, then bake yourself up some cookies!

SO EASY!
And then...ya know...if you're like me...you sprinkle some beautiful sea salt on top.

And then imagine you're a little kid again and all you want to do is ask Santa for more cookies, please.

These cookies are big, crisp, sturdy (important when you're traveling with cookies and/or giving/sending them as gifts), full of delicious peanut butter/chocolate flavor, chewy, and just mmmmm

I estimate about a bjillion of you will now drop everything and go bake these cookies. And then give them to peoples. And then those peoples will worship the ground you walk on. Yes. This shall come to pass.

I don't know if you've noticed but...
I love cookies. 
Like...I really love them.
More than one person has dubbed me a "cookie monster".
Don't get me wrong-I love many desserts! But there's something about cookies...Michael mocks the huge reserve I have of cookie recipes, that I'm just waiting to make.
One of my favorite bloggers that I've recently started following is Baker Bettie. She's amazing-she has a great 50's flair topped with gorgeous photos and a real, scientific knowledge of food-especially cookies! Since cookies are sort of her specialty, she started a new series "Cookies Are The New Cupcake":

Cupcakes get all the attention, cupcakes get all the love. Baker Bettie is saying it's cookies' turn! Again, I like cupcakes-quite a lot! However...I eat cupcakes probably a few times a year...cookies are a much more frequent occurrence (we don't need to say how often...). I've already been lucky enough to be featured on her Sunday "Cookies Are The New Cupcake from the Readers Edition" with my Butter-less Peanut Butter Chocolate Chip Cookies. But, I had to share more cookies! And I had to let you all know about this amazing series.

Anyway-back to these cookies. I made them right before Christmas time-and fell in love! They are thick, chewy, and rich! A large peanut butter chocolate cookie full of pieces of Reese's peanut butter cups. Um, hello heaven? They taste like the amazing cookies that you buy at a bakery and are convinced you could never make at home. But you can!! These were, in fact, inspired by some amazing cookies Annie from Annie's Eats enjoyed while on a trip in Vermont. She was so haunted by these amazing cookies that she set to task recreating them. I never had those original cookies, of course, but these are some of the best cookies that I have had the pleasure of making. They're also super satisfying-one cookie makes you feel complete. Michael loved these, I loved these, and the mean lady on the bus back to Ohio probably loved that 1/2 of the cookie she pretty much forced me to give her....but...that's a different story. Anyway! ME LOVE COOKIES! YOU SHOULD EAT COOKIES RIGHT NOW! (that's my cookie monster impression...get it?...I'm weird...)
