I'm so mad because these pictures DO NOT DO THIS PIE JUSTICE. This is legitimately one of the most delicious things I've made for this blog and I blame stupid crappy rainy-day lighting for the fact that you so have no idea how good these are. Just...trust me. Listen to me. Let me convince you.

Ok...I mean...that photo above gives you some idea--right? LOOK AT THE EPIC LEVELS OF GOOEY RICHNESS! 

So...technically...I've shared this recipe before. In fact, it was the first recipe I ever posted on this blog: my beloved chocolate chip cookie pie. It has been way way too long since I've made that pie because....well because I have a blog and I have a ton of desserts I want to try so it's hard to re-make things. But I somehow improved upon that originally favorite recipe. Let me tell you how.

The original pie recipe calls for melted butter. Which now...if a dessert recipe calls for melted butter....I mean...there's a 99% chance I'm gonna brown that butter. So that's what I did (totally the right call). I also put in a bunch of oh so delicious salted caramel sauce--I poured some on top of the graham cracker crust, drizzled some on top prior to baking AND drizzled some on top after baking. And also sprinkled some sea salt on there. Because when THAT IS HOW WE ROLL.

The result is an ultra rich, super gooey, cookie pie (with melty chocolate chips that make you want to do a happy dance) in a buttery graham cracker crust with lots of rich and gooey caramel and the most gorgeous crackled brown-sugary top. And more caramel. And that salt. And...oh my goodness it is seriously the most wonderful sort of heaven. I prefer to enjoy the deliciousness of this pie warm, but Michael loves it cold. You can also just serve it room temperature. This pie is versatile like that.

I just...I cannot emphasize enough that THIS IS THE BEST THING EVER AND YOU NEED IT IN YOUR LIFE.

Sooo...this recipe falls into the semi-healthy category. It's not like it has 2 sticks of butter plus 2 cups of sugar buuut it's not butter-less or sugar-less either. What I'm saying is-it's not too bad and it's so crazy delicious that it feels like a wonderful compromise between your tastebuds and your waistline.

I have a bit of a culinary character flaw: I have the hardest time getting inspired for what to make for dinner but I always have a million ideas for desserts! I'm never ever ever tired of making new sweet treats but when I'm faced with what to make for an actual meal I'm like, "Uhhhhhhh I don't KNOOOOW!" It's a problem.

A tasty and sweet problem but still...a problem.

This pie tastes like a super chewy and gooey oatmeal chocolate chip cookie with just the right amount of sweetness, but....ya know...in pie form. The graham cracker crust gives it a little extra oomph and there's delish chocolate chips and yum yum yum sea salt on top! Michael took one bite and exclaimed "MMm! This is REALLY good!"--he particularly loved the chewy texture. I'm right there with him.

The Most Delicious Thing You'll Ever Eat AKA Chocolate Chip Cookie Pie

Before I decided to just jump in and do this blog, I sort of waded in the shallow end by doing mini blog posts through notes on facebook. Thusly, I will have my first few recipes I put on here be the same ones I put there. I'm going to tell you right now "you're welcome" for this recipe. It's amazing, it's ridiculous, it's The Most Delicious Thing You'll Ever Eat! I thought my eyes would bug out when I first saw this recipe on How Sweet's blog. Chocolate chip cookie + pie!?? So, it didn't really take me long to tackle the recipe and bask in the wonder of it's yumminess. I eventually learned that this is some sort of adaptation of a Kentucky Derby pie? But I think that uses bourbon? I don't know, all I know is that since I ate all of it....I miss it. I genuinely miss that pie. And my waistline won't let me make it again so soon. *sigh*
Disclaimer: this is a very rich dessert, especially when eaten warm, ideal if you love chocolatey goodness. If you're not such a fan of the richness, it probably would be pretty good to you served cold maybe?
Alright enough! Here it is:

Chocolate Chip Cookie Pie

The Most Delicious Thing You'll Ever Eat AKA Chocolate Chip Cookie Pie
Ingredients:
  • 2 eggs
  • 1/2 cup flour
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 cup (which equals about 16 tbsp) butter, melted and cooled 
  • 1 cup chocolate chips (I used 60% dark cocoa Ghiradelli chips...mmm)
  • 1 unbaked pie shell (The recipe called for a regular unbaked crust, but I used KeeblerReadyCrust in graham cracker (and later homemade graham), I'm sure anything would be good though-use your preference!)
Preparation:

  • Preheat oven to 325 degrees F
  • In a large bowl, beat eggs until foamy. Then beat in flour, sugar, and brown sugar, until well blended. Then blend in melted, room temperature, butter. Stir in (with a spoon, etc.) chocolate chips. (The consistency will not be like regular cookie dough, and it won't taste that awesome, so don't be disappointed. Just wait, the pie will be worth it.)
  • Pour in to pie shell. Bake for 50-60 minutes.

Let it cool for a bit before cutting it, or it'll fall apart. Or just eat it falling apart, no judgement here. You can eat it warm and gooey and chocolatey like me. Serve it warm with ice cream and let it get all up in that pie like HowSweet, or serve it cold, like Michael probably will when I make him eat some. No matter what, just attempt to keep control of your drooling, I know I am right now.....I really do miss that pie.
