Healthy Asiago Chicken Nuggets

Healthy Asiago Chicken Nuggets
I know what you're thinking.
Not in like, a literal-I can read your mind kind of way...although sometimes I have felt like I can sort of read minds...I am fairly certain I'm psychic-laugh all you want but I have dreams that come true!! topic. Anyhow...

I assume you're thinking: "Hmm, I wonder how many different ways Kayle can make chicken?"

The answer is-a lot. I'm sorry that my picky-ness is being taken out on all of you, but, well...that's just the way the cookie crumbles I guess.

Ah! I'm like all over the place today. Yes, so, chicken. These are actually a little different! They're like delicious chicken nuggets we all know and love-but healthy AND a little gourmet tasting because of the asiago cheese. Trust me on this you guys.

(On a completely un-related side note: I'm doing the coolest thing today. Last week I auditioned for the part of 1 of a set of twins in a pilot. They really like me and are "strongly considering" me, but they're having a hard time finding someone to play my twin. SO-today I'm going to go read with a bunch of girls they found who look like me to try to find me a twin! Isn't that SO AWESOME??! I might be over-excited about this....BUT I DON'T CAARE! :p)

Healthy Asiago Chicken Nuggets

Healthy Asiago Chicken Nuggets
  • 4 boneless, skinless chicken breasts
  • enough buttermilk to cover chicken nuggets
  • 1 cup Panko breadcrumbs
  • 1/2 cup regular breadcrumbs (whole wheat is great)
  • 1/6 cup flour (may need slightly more or less of the breadcrumbs and flour, just start with these measurements and add more as needed)
  • 1/4 cup grated Asiago cheese
  • 1/2 tsp. garlic powder
  • 1/2 tsp. paprika
  • Salt and pepper
  • Cut chicken into nugget-sized chunks.
  • For 2-24 hours soak chicken chunks in a large bowl, covered with buttermilk.
  • When ready, line a baking sheet with foil and lay a wire rack on top. Spray the rack with non-stick cooking spray.
  • Preheat oven to 450 degrees.
  • Mix breadcrumbs, flour, cheese, and seasonings in a bowl. Remove chicken nuggets from buttermilk and coat in crumbs mixture.
  • Place prepared nuggets on the wire rack. Spritz all the nuggets with some cooking spray to help them crisp up.
  • Bake 7 minutes. Flip nuggets. Spritz with cooking spray again.
  • Bake 7 more minutes.

  1. i don't think I could ever tire of seeing new chicken recipes. these nuggets sound really delicious! Thanks for sharing this healthy version. I'll be back for more. :)

  2. Ahhh thats so exciting about your audition! And so bizarre trying to find your twin :) Haha and you should totally demand like Heidi Klum or Marissa Miller... I would so do that!

Umm... and your chicken, and alwayssss, looks awesome! I saw it on fb this morning and I was obsessed. I love chicken fingers and basically anything else I can dunk in ketchup :)

    Good luck today Kayle!!

    1. Lol due to my short height and dark hair...prob. wouldn't work :p The auditions actually have been postponed, but thanks love!

  3. I think you should start a nugget drive through, I would be there to pick up my fair share. These look exceptionally tasty!
The twin audition does sound like a lot of fun. They say that everyone has a twin out there. How cool would it be to meet someone that looks exactly like you? I would be excited too! Enjoy the day.

    1. TY! Whats so funny is people always tell me that they see people who look like me all the time, and these producers are like "we're having a hard time" lol

  4. These sound so good! Love the addition of the asiago cheese! Congrats on the audition!

  5. I always make my own nuggets... but never thought to put cheese in the mixture... I'll be doing this with my next batch:) Thanks for sharing.

  6. Oh man these chicken nuggets look good. There are never enough chicken recipes.

  7. Oh, these look amazing! My picky daughter will actually eat homemade chicken nuggets, so I must try your version. Fingers crossed they find your twin and you get the part!!!!

  8. These certainly do look very healthy - goodbye to KFC for the chicken lovers in my family :D

    Choc Chip Uru

  9. There's cheese in it! That's my kind of chicken...add some ham and it will be like a cordon bleu chicken nugget ;)

  10. These look delicious and easy! I also end up eating a lot of chicken, so I'm always looking for fun new things to do with it! Thanks for the great recipe :)

And I just made popcorn chicken using REAL popcorn as the breading! You should try it!

  11. These sound delicious! I make chicken nuggets at home all the time but, I would have never thought to add asiago cheese. Great idea! I hope they can find you a twin!

  12. It's OK, I like chicken. Especially crispy cheesy baked chicken. Good luck with that part!

  13. I don't have a wire rack. Do you have a suggestion of something I can use instead?

    1. You can theoretically just bake the nuggets on the sheet, but the secret to the crispiness is the wire rack. Sorry, hope this was helpful!

    2. Ok, thanks. I may have to invest in a wire rack then. ;)

I love hearing from you-so please let me know what's on your mind! :)
